What causes it

The oak lactones — cis- and trans-β-methyl-γ-octalactone — are present in oak wood as glycosidic precursors and are released during seasoning and toasting. The cis isomer has a threshold roughly an order of magnitude lower than the trans and carries the coconut character. American white oak, Quercus alba, contains substantially more of them than European Quercus robur or Quercus petraea, so the note is a reasonable indicator of barrel origin as well as of barrel age. It does not arise from any apple or fermentation process.
