What causes it
Russeting is a corky replacement of the normal waxy cuticle, and it changes the fruit’s volatile profile in two ways. The corked surface is more permeable to water, so russeted fruit loses moisture and concentrates sugar and acid relative to a smooth-skinned apple of the same size. The suberised tissue itself contributes a dry, faintly woody aroma absent from waxy skin, and the reduced cuticular wax layer lowers the α-farnesene and hexyl ester load that gives smooth-skinned fruit its bright top note. The result is a rounder, drier, nuttier fruit character than the same cultivar unrusseted would give.

Glucose
The sugar yeast takes first and the smallest of the three in apple juice, which is why the last sugar left in a slow ferment is almost never glucose.
Fructose
The dominant sugar of apple juice and the sweetest of the common sugars, which is why apple juice tastes sweeter than its total sugar figure implies and why a stuck ferment leaves sweetness behind.
Terpenes
The floral and citrus aroma compounds that apples carry only in traces and that hops, spices and botanicals bring in quantity, which is why a hopped cider smells so different from an unhopped one.

About Russet apple
Russet character is met most often in single-varietal ciders from russeted dessert and culinary cultivars, and it is one of the few fresh-apple descriptors that reads as dry rather than as bright. It sits close to the nutty end of the oxidative family and is regularly mistaken for mild oxidation.
The distinction is that russet character arrives with the fruit and is present in the juice before fermentation, whereas oxidative nuttiness develops in the vessel and is accompanied by acetaldehyde and by loss of ester intensity. A cider showing russet character with its esters intact has not oxidised.

The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones.
