What causes it
Apple pips contain amygdalin, which on crushing meets the enzyme emulsin and releases benzaldehyde — the bitter-almond smell — along with small quantities of hydrogen cyanide that are of no consequence at the concentrations cider milling produces. The core tissue itself carries the fruit’s highest concentration of phloridzin, a dihydrochalcone with a distinctly bitter taste. Mills that fracture the pips rather than passing them whole therefore add both a faint almond aroma and a faint bitterness that neither flesh nor skin contributes, which is one reason mill type is a variable cidermakers argue about.
Trace amounts are a normal component of any milled-fruit cider. Where a hammer mill has pulverised the pips the almond note can dominate, and it then reads as marzipan rather than as apple.

About Apple core
This is a small descriptor with a specific diagnostic use: it points at milling equipment. Knife and scratter mills tend to leave pips largely intact, hammer mills do not, and the difference is audible in the glass as a faint kernel note behind the fruit.
