Hopping

Hop creep is a genuine over-pressure hazard. Enzymes carried on hop material can release additional fermentable sugar from carbohydrate the yeast had left alone, so a cider that was stable at the point of hopping can attenuate further in a sealed package and build pressure beyond what the container was designed for. Where hopped cider is to be bottled, canned or kegged, allow the hopped batch to reach a stable, unchanging gravity before filling, use containers rated for the pressure that could develop, and keep the packaged product cool. Treat an unexpectedly gushing hopped cider as a pressurised container and open it cold, slowly and away from the face.
What it is
Hopping a cider means holding hop material — whole cone, pellet, or a hop-derived extract — in contact with fermenting or finished cider at cellar temperature, then removing it. There is no boil at any stage, which is the point: the aromatic terpene fraction of the hop dissolves readily in cold liquid while the bitter acids do not undergo the thermal rearrangement that makes beer bitter. The result is a cider that smells strongly of hops and tastes only slightly of them. It has become an established modern category and is one of the additions most likely to be misjudged.
Why it is used
- It supplies citrus, resinous, floral and herbal aromatics that no apple cultivar produces, giving an aromatic dimension to a base cider without adding sugar, colour or acid.
- It works on cider that is already finished, so a producer can take a single stable base and split it into hopped and unhopped products late, which is efficient for a small cellar.
- It can give a dry, low-tannin cider a perception of structure and length, because hop aromatics linger on the palate in a way that thin fruit character does not.
How it works
- Hop aroma is carried by essential oils — myrcene, linalool, geraniol, humulene, caryophyllene and dozens more terpenes and terpenoids — which dissolve into the cider from the lupulin glands over hours to days and reach a plateau well before the material is removed.
- Because there is no boil, the alpha acids are never isomerised into their soluble bitter forms, so the bitterness contribution is minimal; what little is perceived comes mostly from polyphenols and from a general drying effect rather than from iso-alpha acids.
- If hops go in while yeast is still active, yeast enzymes biotransform some of those terpenes — geraniol is reduced towards citronellol, and glycosidically bound aroma precursors in the hop are hydrolysed and released — so a fermentation-stage addition smells materially different from the same hop added to finished cider.
- Hops also carry their own carbohydrate-active enzymes, and these can liberate additional fermentable sugar from residual carbohydrate. Where any viable yeast remains, that produces further attenuation and further carbon dioxide after the maker believed fermentation was finished — the phenomenon known as hop creep.
- Terpene aroma is chemically fragile: it oxidises steadily in package into heavier, cheesy and stale-resin notes, so a hopped cider has a shorter aromatic life than the same cider unhopped.

The cumulative effect of oxygen on finished cider: fruit aroma flattens, colour deepens towards amber, and a bruised-apple or sherry-like character replaces the fresh one.

The mechanism is worth stating plainly because so much of the confusion around hopped cider comes from importing beer assumptions. In brewing, bitterness is created in the kettle: heat converts humulone and its relatives into iso-alpha acids, which are soluble and intensely bitter. Nothing in cider making supplies that heat. A cider hopped cold therefore extracts the oil fraction — a complex mixture in which myrcene dominates by mass but linalool and geraniol contribute disproportionately to what the nose detects — while leaving the bitter precursors largely as insoluble, unperceived material. The practical consequence is that a maker cannot dose hops for bitterness in cider, and dosing heavily in pursuit of it produces vegetal, grassy extraction long before it produces balance.
When the hops go in is the substantive decision. Added during active fermentation, hops meet living yeast, and the biotransformation that follows is real chemistry rather than folklore: glycosidase activity liberates bound aroma compounds that would otherwise remain locked, and reductase activity converts geraniol towards citronellol, shifting the aroma from geranium and rose towards lime and lemon. Added to finished cider, the hop presents its own oil profile unaltered and the character is cleaner but less integrated. Contact time is short in either case — most extractable aroma has moved into solution well within a few days, after which continued contact mainly adds polyphenol and green plant character. Removing the hop material promptly, and keeping oxygen away while doing it, matters more than the dose.
What goes wrong divides into pressure and staleness. Hop creep is documented most fully in beer, where residual dextrin gives the hop enzymes plenty of substrate; cider carries much less of that, so the effect is generally smaller, but it is not zero and any residual sugar plus surviving yeast is enough to move a package outside its rating. The second failure is slower and more certain: hop aroma does not keep. Oxidation of the oil fraction converts fresh, lifted terpenes into stale, cheesy and cardboard-adjacent notes over a matter of months, so a hopped cider should be built for prompt sale, packaged with real attention to dissolved oxygen, and dated accordingly rather than laid down.

- How much pressure builds up in a bottle of cider — Enough to matter. Every gram of sugar fermented in a sealed bottle produces gas, and a bottle not rated for it can fail. The French cider appellations require a minimum of 1.0 to 1.5 bar at 20 °C, and a bottle-conditioned cider can go well beyond that if it was filled with more sugar than intended.
- Why did my cider bottles explode — Because fermentable sugar was still present, or too much priming sugar was used, and the pressure exceeded what the bottle could hold. Never bottle a cider whose gravity is still falling, and never use bottles not designed for pressure.
- What is oxidation in cider
- Where does the fizz in cider come from — Either from fermentation trapped in a sealed container, or from carbon dioxide dissolved into the cider under pressure before filling. The French cider appellations permit only the first, and require at least 1.0 to 1.5 bar at 20 °C depending on the name.
- Why did my sweetened cider start fermenting again — Live yeast met the sugar that was added back. Sweetening is only stable if the yeast has been removed by sterile filtration, killed by pasteurisation, or held in check by sorbate together with sufficient sulphite.
- Why does my cider gush out when i open it — Either the cider is over-carbonated, or it is warm, or nucleation sites such as yeast and haze are releasing the gas all at once. Chilling the bottle thoroughly before opening solves most cases that are not genuine over-carbonation.

Opened on 2026-08-24, and the edition matters. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.
