What causes it
Quince aroma in cider and perry is a composite: ethyl hexanoate and ethyl octanoate supplying the fruit weight, and low levels of terpene alcohols and C13-norisoprenoids supplying the perfumed, faintly floral edge that separates it from plain ripe apple. It rises with a warm ferment, with certain cultured Saccharomyces strains selected for ester production, and with a few months of bottle maturation during which ester balance shifts. In perry it is particularly common, because pear juice supplies both the ester precursors and a higher terpene load than apple does.

Ethyl hexanoate
One of the most powerfully aromatic esters in cider, perceptible at a few micrograms per litre, contributing green apple and aniseed to the fruit complex.
Ethyl octanoate
A medium-chain ethyl ester contributing ripe pear and a waxy sweetness, and one of the compounds that makes an ester-forward cider feel rounder as well as fruitier.
Terpenes
The floral and citrus aroma compounds that apples carry only in traces and that hops, spices and botanicals bring in quantity, which is why a hopped cider smells so different from an unhopped one.
Lactones
Cyclic esters that give peach and apricot character, formed from fatty acids and often carried in bound form, which is why stone-fruit notes can appear in a cider months after fermentation.

About Quince
Quince is one of the few descriptors imported from wider fruit vocabulary that earns its place in a cider lexicon, because it names a real intermediate perception — heavier and more perfumed than apple, less obviously pear-shaped than pear — that panels otherwise record as an unhelpful compound of both.
It is met most in perry, in bottle-matured still cider, and in ciders fermented warm with aromatic yeast strains. Where it appears alongside honeyed and beeswax notes it is usually a maturation effect; where it appears with fresh esters it is a ferment effect.

- What temperature should cider ferment at — Most cider is fermented cool, commonly between about 12 and 18 °C. Cooler ferments keep more fruit aroma and run slower; above the low twenties the cider tends towards hot, solvent-like higher alcohols.
- What yeast should i use for cider — CiderHQ does not recommend brands. The choice is between a neutral, reliable strain that lets the fruit show, an aromatic wine strain that adds its own esters, and no addition at all. Alcohol tolerance, cold tolerance and nitrogen demand are the properties worth comparing.
- What is perry — Perry is an alcoholic drink made by fermenting the juice of pears, traditionally of specific perry pear cultivars rather than eating pears. It is to pears what cider is to apples, and has its own history in the three counties of England and in Normandy.
- Can you make cider from shop bought apple juice — Yes, provided the juice contains no preservative — check for potassium sorbate or benzoate on the label. Pasteurised juice ferments perfectly well once yeast is added, because pasteurisation removes the organisms but not the sugar.
- Does cider get better with age — Some does. Tannic, dry, bottle-conditioned ciders and ice ciders can gain for several years. Light, fruit-driven and commercially filtered ciders lose their aroma and do not gain anything in exchange.

The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones. Read in full on 2026-08-24 and transcribed into `data/trials/wsu-mount-vernon.ts`; four published figures were found to be impossible and are withheld there with their reasons.
