Bittersweet apple
The soft, low-acid, faintly earthy ripe-fruit character of traditional West Country cider fruit, inseparable from its phenolic weight.

What causes it
Bittersweet cultivars under the Long Ashton classification carry total acid below roughly 0.45% as malic and tannin above roughly 0.2%, and that combination produces a distinctive aroma as well as a distinctive palate. Low malic acid removes the sharp top note, so the fruit esters that remain read rounder and heavier. High procyanidin content contributes its own faintly earthy, faintly leathery aromatic layer through the degradation products of chlorogenic acid and the higher polymers. The perception is of ripe apple with the edges taken off it and something underneath, and it is the aroma most people mean when they say a cider smells of cider rather than of apples.

Procyanidins
The condensed tannins of cider fruit, whose chain length — not their quantity — decides whether the mouth registers bitterness or astringency.
Chlorogenic acid
The most abundant single phenolic in apple juice, the preferred substrate of the enzyme that browns it, and the precursor of one of the volatile phenols behind farmyard character.
Malic acid
The acid of apples, which supplies almost all the sharpness a cider has and, through pH, decides how vulnerable that cider is to everything that could spoil it.
Hexyl acetate
The apple-skin and pear ester that is genuinely carried in from the fruit rather than made by the yeast, and one of the few fresh-fruit aromas that survives fermentation.

Holding milled pomace before pressing so that phenolics, aroma precursors and pectin have time to move out of the solid tissue and into the juice.
Juice blending
Combining juices from different cultivars before fermentation so that the blend ferments as a single batch, as against fermenting separately and blending later.
Tannin balancing
Setting the phenolic structure of a blend, which means handling bitterness and astringency separately because they are different perceptions produced by different sizes of the same molecules.
Barrel ageing
Holding cider in wood — which may mean an old neutral vat used simply as a vessel, or fresh or spirit-seasoned oak used as a source of flavour, and the two are not the same operation.

About Bittersweet apple
This descriptor is deliberately named for the fruit class rather than for a smell, because the perception genuinely is the class. It is the single most useful term for distinguishing a traditional West Country or Norman cider from a dessert-fruit one in a blind flight, and trained panels agree on it more consistently than on almost any other fruit descriptor.
The confusion to avoid is with oxidation. Bittersweet character and mild oxidative character both read as soft, deep and non-bright, and they very often co-occur because the traditional production methods that use bittersweet fruit also involve barrel maturation and air contact. The test is whether acetaldehyde is present: bittersweet character alone does not bring it.
