What causes it
Sweetness perception is not determined by sugar alone. Volatile compounds learned in association with sugar — the acetate esters of ripe fruit above all — enhance perceived sweetness through cross-modal integration, and acidity suppresses it. A low-acid bittersweet cider carrying strong ester aroma therefore tastes sweet at residual sugar levels a high-acid sharp cider would taste bone dry at. This is a perceptual mechanism rather than a compositional one, which is why analysis and panel routinely disagree about it and why both are right.

Hexyl acetate

About Sweet apple
This descriptor exists to give panels somewhere to put an observation they otherwise misfile as residual sugar. A cider recorded as sweet on the palate and analysed at under two grams per litre has not been mismeasured; it is showing this effect.
It matters commercially because the sweetness a drinker perceives is the sweetness they are buying, and because the traditional West Country practice of blending low-acid bittersweet fruit produces it as a matter of course. Fructose is relevant here too: apples carry more fructose than glucose, and fructose is the sweeter of the two, so the residual sugar a cider does carry punches above its weight.

The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones.
