Dessert apple
The bright, aromatic, low-tannin fruit character of eating apples, dominant in eastern counties and most modern mainstream cider.

What causes it
Dessert cultivars have been bred for eating, which means selection for high ester production, moderate acidity and — decisively — very low procyanidin content, because tannin is unwelcome in fruit eaten raw. Juice from them therefore carries an unusually high ratio of fruit aroma to phenolic structure. In cider that reads as a forward, bright, uncomplicated apple character with nothing behind it: the aroma is emphatic and the mid-palate is short, because there is little tannin to occupy it. Culinary cultivars behave similarly with acidity substituted for aroma.

Hexyl acetate
The apple-skin and pear ester that is genuinely carried in from the fruit rather than made by the yeast, and one of the few fresh-fruit aromas that survives fermentation.
Ethyl butanoate
A short-chain ethyl ester perceived at very low concentration, giving the sweet pineapple-and-apple lift that reads as ripe fruit in a young cider.
Malic acid
The acid of apples, which supplies almost all the sharpness a cider has and, through pH, decides how vulnerable that cider is to everything that could spoil it.
Total phenolics
The single number used to summarise everything phenolic in a juice, useful for comparing fruit and misleading whenever it is used to predict how a cider will taste.

About Dessert apple
The overwhelming majority of cider made worldwide is made from dessert and culinary fruit or from concentrate derived from it, so this is the fruit character most drinkers have actually met, whether or not they have a name for it. Naming it neutrally matters: it is a compositional fact about the fruit, not a verdict on the cider.
It is the direct counterpart of the bittersweet-apple descriptor, and the two are the clearest single axis in cider. Panels distinguish them reliably: dessert-apple character is bright and short, bittersweet character is soft and long.

- What is malic acid and why does it matter in cider — Malic acid is the acid of apples and supplies almost all the sharpness a cider has. It also sets pH, which decides how well sulphite works and how exposed the cider is to spoilage, so it does far more work than its taste suggests.

The single most useful open cider dataset CiderHQ has found. The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones. Read in full on 2026-08-24 and transcribed into `data/trials/wsu-mount-vernon.ts`; four published figures were found to be impossible and are withheld there with their reasons.
