Overripe apple
Heavy, faintly alcoholic fruit aroma from apples past the climacteric, where the fruit has begun fermenting on its own account.

What causes it
After the climacteric an apple continues to respire, and as its internal oxygen falls it shifts partly to anaerobic metabolism, producing ethanol and acetaldehyde within the fruit itself. Alcohol acyltransferase then esterifies that ethanol into ethyl esters — ethyl butanoate, ethyl hexanoate, ethyl 2-methylbutanoate — which are heavier and more penetrating than the acetate esters of proper ripeness. The result is fruit aroma with weight and a faint spirituous lift behind it. Wild yeast on the skin adds ethyl acetate at the same time, which is why overripe fruit and a whisper of solvent so often arrive together.
Controlled sweating of fruit before milling is a deliberate traditional step and produces this note at a level that adds depth. Fruit held too long crosses into acetic and mouldy territory, at which point the descriptor to reach for is not this one.

Ethyl butanoate
A short-chain ethyl ester perceived at very low concentration, giving the sweet pineapple-and-apple lift that reads as ripe fruit in a young cider.

One of the most powerfully aromatic esters in cider, perceptible at a few micrograms per litre, contributing green apple and aniseed to the fruit complex.

About Overripe apple
Sweating fruit — holding it in a loft or heap until it softens — is standard practice in West Country and Norman cider making, done to raise soluble solids and soften the flesh for pressing. Overripe-apple aroma is the direct sensory consequence, and its presence in a traditional cider is evidence of method rather than of neglect.
In a cider made from fruit intended to be pressed fresh it means something different, and the accompanying notes decide which reading applies: overripe fruit with clean ethyl esters points at sweating, overripe fruit with acetic sharpness points at fruit that sat too long.
