A Minnesota-bred crab from 1946 with a distinctive nutty flavour and good sugar, cold-hardy enough for the upper Midwest and Quebec, and widely used as an aroma component in northern cider.

Humid continental, with a hotter summer and a colder winter than any European cider region. The compiler suggests the growing conditions may be part of why the phenolic figures sit so far below the English ones, and is careful not to claim it.

About Chestnut Crab
Cold is the limiting factor on apple growing north of about the forty-fifth parallel, and the University of Minnesota programme has spent a century breeding for it. Chestnut was released in 1946 as a hardy crab worth eating, and it is a good deal more than that: the flesh has a genuine nutty character, the sugar is high, and the skin carries a light astringency that most American fruit lacks entirely.
That makes it useful to exactly the makers who have fewest options. A cider maker in Quebec, Vermont or Wisconsin cannot grow English bittersweets reliably — the trees do not survive the winters — and the hardy Minnesota and Siberian-derived material is what is available. Chestnut brings aroma and gravity to blends that would otherwise be built entirely on hardy culinary fruit, and it appears in ice cider blends for the same reason.
It keeps badly, which imposes a schedule. The fruit ripens early and goes over quickly, so it has to be milled as it comes rather than held for a convenient pressing day. In a small northern operation that is an inconvenience; in a larger one it is a reason not to plant it.
