Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
Minnesota has the most severe winters of any American state with a commercial apple industry, and that fact organises everything. Winter minima are low enough to kill most cultivars bred for temperate maritime climates outright, so the orchard base consists almost entirely of fruit bred specifically for extreme cold hardiness. The growing season is short, running from a late-May last frost to a September first frost in much of the state, and heat accumulation is limited, so late-ripening cultivars cannot be finished. Summers are warm and can be humid, with scab and fire blight pressure through the season. Autumn cooling is rapid, and fruit ripens under cold nights that hold malic acid strongly — juice here is characteristically high in acid. Reliable snow cover insulates roots in most winters, and a winter with deep cold and little snow is when orchard losses occur.

History
How cider making here came to take the shape it has.
