How it is classified
No classification scheme has been recorded for Honeycrisp. That is common outside Europe: the English, French and Spanish systems were each built for their own fruit, and a cultivar grown where none of them applies simply has no class. What the fruit contributes to a blend is described below regardless — the class is a shorthand for that, not a substitute.

Sweet and mildly aromatic with a moderate acid line; the celebrated quality is textural rather than flavoursome, and texture does not survive a press.
Aroma
No aroma descriptors are recorded for Honeycrisp, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

Reported as malic acid, straddling the Long Ashton sharp threshold. Honeycrisp is perceived as balanced rather than sharp because its high sugar masks the acid on the palate — a reminder that perceived sourness and measured acid are different things.

Rarely bottled on its own
A single-varietal Honeycrisp cider loses the only property the fruit is famous for. The texture that justifies its price disappears in the mill, and what remains is a mild, sweet, structureless juice.
About Honeycrisp
Honeycrisp is the most commercially successful apple bred in North America in the last fifty years, and its success rests on something a cider maker cannot use. The cells are unusually large and rupture rather than separate when bitten, which gives an explosive crispness that consumers pay a premium for. Put the fruit through a mill and that property is gone, and what remains is a sweet, moderately acid, aromatically modest juice.
It is nevertheless genuinely important to cider, for two unrelated reasons. The first is ice cider. Cryoconcentration works by freezing juice or fruit and drawing off the concentrated fraction, and it rewards fruit with high sugar and retained acid — because everything in the juice concentrates together, and a juice that starts unbalanced ends up dramatically unbalanced. Honeycrisp starts with high soluble solids and holds enough acid, and Quebec and Vermont producers use it accordingly.
The second is bitter pit. Honeycrisp is badly affected by it, and pitted fruit cannot be sold fresh at any price. That downgraded fruit goes to the press, in quantity, which means a large volume of North American cider contains Honeycrisp for reasons that have nothing to do with anybody choosing it. That is the same mechanism that put Ben Davis and Rome Beauty in the press a century earlier, operating on a much more expensive apple.
Its parentage record is worth a note. It was released as Macoun crossed with Honeygold, and DNA analysis later showed that was wrong — one parent is Keepsake and the other is a discarded Minnesota selection that no longer exists. Institutional records are the strongest evidence available for cultivar parentage and they are not infallible, which is why this file marks parentage established or not rather than simply reporting it.
Names, origin and identity
Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

Released as a cross of Macoun and Honeygold. DNA work subsequently showed that to be wrong: Keepsake is one parent and the other is an unnamed Minnesota selection no longer in existence. The record as published was incorrect and has been corrected, which is a useful reminder that institutional parentage records are evidence rather than proof.
