Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
Washington contains two orchard climates separated by the Cascade crest. The Yakima, Wenatchee and Columbia basins east of the mountains receive very little rainfall, have hot cloudless summers and cold winters, and swing sharply between day and night temperatures. That combination builds high sugar and strong colour while the cold nights limit acid loss, and the dryness suppresses fungal disease to a degree that rain-fed regions cannot approach. Everything there depends on irrigation, which also means growers regulate tree water status deliberately rather than accepting what falls. West of the crest, the Puget lowland has mild wet winters, dry cool summers, a long frost-free period and heat accumulation low enough that late-ripening European cider cultivars finish slowly, in conditions close to those of southern England. Winter cold in the eastern valleys is severe enough to cause occasional trunk and bud injury.
Soils
The eastern orchards grow on deep aeolian loess and sandy volcanic-derived soils over basalt — low in organic matter, low in natural fertility, but deep and free-draining, and productive under irrigation and fertigation. West of the Cascades the soils are glacial and alluvial loams, wetter and more variable, with drainage the limiting factor on site choice.

- Eastern Washington orchards are among the most intensively managed fruit plantings anywhere: high-density trellis systems on dwarfing rootstock under drip irrigation, grown for the fresh export and domestic market.

History
How cider making here came to take the shape it has.
- Commercial fruit growing in eastern Washington began with the federal and private irrigation projects of the late nineteenth and early twentieth centuries, which converted arid basin land into orchard.
- Settler farms in the Puget lowland planted orchards and made cider through the nineteenth century, but the practice was domestic and did not develop into an industry.
- The state became the dominant supplier of American fresh apples through the twentieth century, and the cultivar mix and infrastructure were built entirely around eating fruit.
- Fermented cider re-emerged in the 1990s and expanded quickly after 2010, taking advantage of the fruit supply and of an established craft brewing sector.
- Washington State University established a cider research and extension programme that has produced cultivar evaluations and a trained-panel sensory lexicon, giving the state an analytical basis for cider description that predates any settled local style.
Culture
What the drink is for here, and the occasions and rooms it belongs to. This is not decoration around the cider — in several of these places it is the part that decides how the cider is made.

About Washington State
Washington grows more apples than any other American state, and the scale of that fact governs everything about its cider. Fruit and juice are available in quantity and at a price that no European cider region could match, which is why a substantial share of American cider by volume originates here, and why much of it is made from dessert-fruit juice rather than from purpose-grown cider fruit.
The state’s two climates should be understood separately. The irrigated basins east of the Cascades are close to an ideal environment for growing apples as a commodity: intense sunlight, wide diurnal range, low disease pressure and full control of water. Fruit there reaches high soluble solids with good acid retention. West of the mountains, the Puget lowland provides a cool, long, damp season in which English and French cider cultivars ripen much as they do in their home climates, and that is where most of the state’s cider-specific planting sits.
Washington is also the American state with the most developed analytical apparatus for cider. A university research programme has evaluated cider cultivars under local conditions and built a trained-panel sensory lexicon in which each descriptor is tied to a physical reference. That is a different epistemic basis from an inherited classification: it describes what is in the glass rather than assigning fruit to categories devised elsewhere, and it is one of the more genuinely original contributions any modern cider region has made.
What the state does not have is a traditional style. There is no continuous local cider practice to draw on, and the commercial idiom — carbonated, canned, often hopped or fruited, sold through beer channels — reflects the market it grew up in rather than any inherited method. The choice is between a neutral, reliable strain that lets the fruit show, an aromatic wine strain that adds its own esters, and no addition at all. Alcohol tolerance, cold tolerance and nitrogen demand are the properties worth comparing.
- What is dabinett — The most widely planted English cider apple: a late bittersweet with soft, full tannin that ferments into a cider needing very little added to it. Long Ashton measured it at 0.18 per cent acid and 0.29 per cent tannin.

It also states outright that its results diverge from the English ones.
