How it is classified
Long Ashton classification
Sweet
Low acid and low tannin. Fruit that contributes sugar, alcohol and body but little structure or sharpness.
Basis: Below about 0.45% w/v acid and below about 0.2% w/v tannin.

Low acid and negligible tannin place it in the sweet class. Under the English scheme Gala sits in the same box as a West Country sweet cider apple, which shows how much the scheme leaves out: the two contribute quite different things to a blend.

What it contributes to a blend
A direction, not a measurement. These bands are the level of resolution the evidence supports, and they say which way adding this fruit pushes a blend rather than what the finished cider will be.

Aroma
No aroma descriptors are recorded for Gala, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

Not suited to a single-varietal cider
A single-varietal Gala is flat. There is not enough acid to give it shape or to protect the ferment, no tannin to give it length, and the aroma is too slight to carry it. Acid has to come from somewhere else.
About Gala
Gala is a very good apple to grow and a poor apple to ferment, and both facts matter. It crops early, heavily and reliably, it stores and ships well, and consumers buy it; it is planted in New Zealand, Chile, South Africa, Washington, Michigan, France and Italy in quantities that few cultivars have ever reached. Wherever it is grown, its culls go to a press.
What it contributes to a cider is sugar, volume and dilution. The acid is low — often below the Long Ashton sweet–sharp boundary — and that is a genuine production problem rather than a matter of taste. A juice fermenting at a high pH is more vulnerable to lactic and acetic bacteria, sulphite is less effective, and the finished cider tastes flabby. Every large producer working with Gala corrects it, usually with Granny Smith, sometimes with added malic acid.
It is worth being clear that this is not a criticism of anyone’s choices. Cider made in Australia, South Africa or the United States at commercial scale is made from the fruit those countries grow, and those countries grow Gala. The alternative is not a bittersweet orchard; it is either no cider or imported concentrate. A knowledge site that treated Gala cider as an embarrassment to be passed over would be describing a cider industry that does not exist.
The classification recorded above is instructive. Under the Long Ashton scheme Gala is a sweet, the same class as a purpose-grown West Country sweet cider apple. The two are nothing alike: the cider apple carries aromatic and phenolic material the scheme’s two axes do not measure, and Gala does not. It is a good illustration of why every classification statement on this site names its system and why the numbers sit beside it.

The single most useful open cider dataset CiderHQ has found. The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones. Read in full on 2026-08-24 and transcribed into `data/trials/wsu-mount-vernon.ts`; four published figures were found to be impossible and are withheld there with their reasons.
