- Whether cider-specific fruit has been planted, which some producers have done — a slow decision, since a bittersweet orchard is years from its first useful crop and there is no domestic tradition to sell into meanwhile.
What gets misread
- Assuming the dessert-fruit base means a thin cider. Dessert fruit limits tannin rather than aroma, and an export apple industry supplies fruit picked at proper maturity — which is a better starting point than a lot of cider fruit gets.
- Reading it as Australian cider with a different flag. The climate is cooler and wetter, the acid runs higher, and the sector is smaller and less dominated by concentrate.
