About Tasmanian cider
Tasmania was once known as the Apple Isle, and the phrase was commercial rather than sentimental: the island shipped fruit to Britain and elsewhere in quantity through much of the twentieth century, and its orchards were planted with the cultivars that market wanted. The trade collapsed when Britain joined the European Community and its trading patterns changed, and a great many trees came out. What remained was a cool-climate orchard region with a strong horticultural memory and no export market.
For cider that history is an advantage. The island sits far enough south, and close enough to the ocean, that apples ripen slowly with high acid retained — precisely the condition most of mainland Australia cannot provide. The inherited cultivar list includes older English varieties such as Sturmer Pippin and Cox’s Orange Pippin that were planted for the British trade, and these press to juice that makes considerably better cider than modern supermarket varieties.
The modern sector is small and made up largely of independent producers making full-juice cider from named orchards, some of them working with fruit from trees planted for a market that no longer exists. Several have planted English and French cider cultivars — Kingston Black and Dabinett among them — which grow well in the climate and supply the tannin the dessert inventory lacks.
What a drinker meets is generally cleaner and brighter than a West Country cider and more structured than mainstream Australian cider: high acid, moderate body, real fruit aroma, and where cider fruit is used a genuine tannic finish. The island’s cider is most usefully understood as a cool-climate expression rather than as a version of anything European, and its trajectory is still being set.

- A fresher, more structured register than the mainland category, with the acid doing most of the structural work. Where tannin is present it is usually restrained, so the shape is a bright entry and a clean finish rather than the slow drying build of a West Country cider.
What gets misread
- Treating it as Australian cider. The climate difference is the whole point of the distinction.

- What temperature should cider ferment at — Most cider is fermented cool, commonly between about 12 and 18 °C. Cooler ferments keep more fruit aroma and run slower; above the low twenties the cider tends towards hot, solvent-like higher alcohols.
- How do you pour bottle conditioned cider — Stand the bottle upright for a day, chill it, and pour in one continuous movement, stopping when the sediment reaches the shoulder. Some traditions deliberately rouse the sediment instead, and both are defensible.
- What is dabinett — The most widely planted English cider apple: a late bittersweet with soft, full tannin that ferments into a cider needing very little added to it. Long Ashton measured it at 0.18 per cent acid and 0.29 per cent tannin.
- Can you fix a cider that has gone vinegary — Not really. Volatile acidity cannot be removed at small scale, and blending it away only dilutes it. The realistic options are to accept it, to blend a lightly affected batch into a much larger sound one, or to let it finish becoming vinegar.
- Can you make cider from shop bought apple juice — Yes, provided the juice contains no preservative — check for potassium sorbate or benzoate on the label. Pasteurised juice ferments perfectly well once yeast is added, because pasteurisation removes the organisms but not the sugar.
