Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
Nelson sits at the top of the South Island, sheltered by mountains to the south and west, and records among the highest annual sunshine hours in New Zealand. The growing season is long, bright and comparatively dry, with warm days and cool nights moderated by proximity to Tasman Bay. High light levels drive photosynthesis and colour development, which is why the district became an export apple region — fruit finishes well and packs well. Cool nights help hold acid, so juice tends to be better balanced than fruit from warmer North Island districts. Rainfall is moderate and concentrated outside the peak of summer, so irrigation is used on lighter soils but the district is not arid. Spring frost is a manageable rather than dominant risk, and fungal pressure is lower than in wetter parts of the country.

Alluvial gravels and sandy loams on the Waimea and Motueka plains drain freely and warm early, which suits intensive orcharding but requires irrigation; heavier soils on the surrounding hill country are less used for pome fruit.

History
How cider making here came to take the shape it has.

About Nelson
Nelson is an export apple district that also makes cider, and the order of those two things matters. The climate explains why the district grows fruit at all. Sheltered by mountains and recording some of New Zealand’s highest sunshine totals, Nelson gives fruit a long, bright, moderately dry season with cool nights that preserve acid.
