Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
The Western Cape has a Mediterranean climate — hot dry summers, wet winters — which on its own is too warm for reliable apple growing. Pome fruit is grown instead in elevated basins and valleys where altitude and topography produce cooler conditions: Elgin and Grabouw behind the coastal mountains, and Ceres in a high inland basin. Elevation lowers summer temperatures and, critically, delivers enough winter chilling for apples to break dormancy evenly, which is the binding constraint in a warm-winter climate. Cool nights in these basins help retain acid while long sunny days build sugar. Summer rainfall is minimal, so orchards are irrigated from winter-filled storage, and low humidity keeps fungal disease pressure light compared with maritime regions. Wind off the mountains is a real factor on exposed sites. Fruit from these districts is grown to export specification, and its acid balance reflects the cool-night effect rather than any cider-specific selection.
Soils
Elgin and the surrounding basins carry soils derived from Table Mountain sandstone and shale — acidic, often shallow and low in nutrients, requiring correction and careful irrigation management; deeper alluvial soils occur along valley floors.

History
How cider making here came to take the shape it has.

About Western Cape
The Western Cape grows apples in spite of its climate rather than because of it. A Mediterranean regime of hot dry summers and mild wet winters does not supply the winter chilling apples need, so commercial orcharding is confined to elevated basins — Elgin and Grabouw behind the coastal mountains, Ceres inland — where altitude provides both cooler summers and enough winter cold for even bud break.
The fruit grown there is export fruit, managed to specification for northern hemisphere off-season markets. What fails export grade goes to processing, and that stream is the basis of South African cider. The country has a large industrial cider category, drunk widely as a mainstream commercial drink, made from that processing fruit and from concentrate.
This is a different structure from most cider-producing countries. There is no vernacular farmhouse tradition underlying it, no body of tannic cider fruit, and no regional style in the European sense.
