About South African cider
South Africa has one of the largest cider markets in the world relative to its population, and almost all of it is a single kind of product: a pale, filtered, carbonated, medium-sweet drink made largely from apple concentrate and sold in bottles and cans as a direct alternative to beer. The category has been established for decades and is a substantial part of the national drinks trade.
The fruit behind it comes from the Western Cape, where the deciduous fruit industry is concentrated in the cooler valleys and at altitude — Elgin, Ceres, the Langkloof — and is oriented towards export dessert apples. The plantings that reach processing are high-yielding dessert cultivars, Granny Smith prominent among them, and the juice from them is moderate in acid and free of tannin, which suits the mainstream format and provides no structure for anything else.
A small craft sector has appeared, working with fresh-pressed juice from the same growing districts and in a few cases with planted cider cultivars.
