Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
The Cascade range divides the region into two climates that could hardly be less alike. West of the mountains the climate is maritime, with mild wet winters, dry summers, cool nights and a long frost-free season — conditions broadly comparable to north-west Europe and capable of ripening European cider cultivars without irrigation. East of the mountains lies a rain-shadow desert with hot, cloudless summers, cold winters, very large diurnal temperature swings and annual rainfall too low for orcharding without irrigation. The eastern side accumulates far more heat and far more sunlight, producing high sugars and intense colour, while the cold nights preserve acid better than a comparably hot but humid eastern climate would. Because irrigation supplies the water, growers there control tree water status directly, which is a degree of precision no rain-fed European region has. Disease pressure is correspondingly low in the dry interior and substantial in the wet west.
Soils
The eastern orchards sit largely on deep windblown loess over basalt, low in organic matter and dependent on irrigation and fertigation, but deep-rooting and free-draining. West of the Cascades the valley floors carry alluvial and glacial-outwash loams with higher rainfall and, in places, drainage problems that make site selection more restrictive.
The orchards

- The eastern side is one of the most technically advanced fruit-growing districts anywhere: high-density trellised plantings on dwarfing rootstock, drip irrigation, and management aimed at fresh-market fruit for domestic and export sale.
- Cider is a minor use of a very large apple crop, and much of the region’s cider is made from processing-grade fruit or from purchased juice rather than from purpose-grown cider fruit.
- Dedicated cider orchards of English and French cultivars have been planted on both sides of the Cascades since the 1990s, and the maritime west has proved climatically suited to them.

History
How cider making here came to take the shape it has.
- Fruit growing in the Pacific Northwest is a late-nineteenth and twentieth-century creation, made possible by irrigation projects in the arid interior and by rail access to eastern markets. There is no colonial cider history here of the kind the eastern states have.
- Settlers did plant orchards and make farm cider in the Willamette and Puget lowlands in the nineteenth century, and some old trees from that period survive, but the drink never held the structural role it held in New England.
- Twentieth-century development was overwhelmingly towards fresh dessert apples, and the region became the dominant supplier of the American fresh apple market — a position that shaped the cultivar mix towards eating fruit and away from anything tannic.
- The modern cider industry emerged in the 1990s and expanded rapidly after 2010, drawing on abundant fruit, on a large regional craft brewing sector for expertise and distribution, and on maritime valleys where European cider cultivars grow well.
- The region now produces a large share of American cider by volume, much of it at scale and in a modern idiom, alongside a smaller orchard-based sector working with cider-specific fruit.
Culture

About Pacific Northwest
The Pacific Northwest is the largest apple-growing region in the United States and now the largest cider-producing one, and neither fact rests on a long tradition. Commercial fruit growing here is a product of twentieth-century irrigation engineering and rail freight, and the cider industry is a product of the last thirty years. What the region has instead of history is fruit in enormous quantity, a technically sophisticated growing sector, and a research base that measures rather than assumes.
The Cascade divide is the single most important thing to understand about the region. The arid east grows the fruit: hot cloudless summers, cold nights, deep loess soils and complete control of water through irrigation, producing high-sugar, well-coloured, low-disease fruit at scale. The maritime west has the cool, damp, long-season conditions in which English and French cider cultivars behave much as they do at home, and it is there that most of the region’s purpose-grown cider fruit is planted. A cider region containing both a desert and a temperate rainforest has options no single-climate region does.
Because the fruit supply is dominated by dessert apples, most cider by volume is made from high-sugar, low-tannin juice, and its structure comes from acid, carbonation and added ingredients rather than from phenolics. That is a legitimate style rather than a failing, but it is a different object from a West Country or Norman cider and the region’s own producers generally say so.
The region has also done something unusual: it has built a formal sensory vocabulary for cider from trained-panel work rather than borrowing one from beer, wine or English tradition. Combined with published juice-composition data for cider cultivars grown under both Cascade climates, this gives the Pacific Northwest a measured basis for description that most cider regions, including the historic European ones, do not have.

- What yeast should i use for cider — CiderHQ does not recommend brands. The choice is between a neutral, reliable strain that lets the fruit show, an aromatic wine strain that adds its own esters, and no addition at all. Alcohol tolerance, cold tolerance and nitrogen demand are the properties worth comparing.
- What is dabinett — The most widely planted English cider apple: a late bittersweet with soft, full tannin that ferments into a cider needing very little added to it. Long Ashton measured it at 0.18 per cent acid and 0.29 per cent tannin.

The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones. Read in full on 2026-08-24 and transcribed into `data/trials/wsu-mount-vernon.ts`; four published figures were found to be impossible and are withheld there with their reasons.

The work first appeared in 1980 as Sweet & Hard Cider: Making It, Using It, & Enjoying It (Garden Way, Charlotte, Vermont) and was retitled for the 1997 Storey edition the site had registered; nine editions are recorded in total. That matters for a source cited on North American practice, because a passage in the 1980 text and a passage in the 1997 one are not interchangeable and neither is the 2003 revision. Two scans exist in the Internet Archive — sweethardciderma0000prou for the 1980 edition and cidermakingusing0000prou for the 1997 — both access-restricted to the lending library and the print-disabled collection, so neither is openable by retrieval.
