Pacific Northwest
Washington and Oregon, with the WSU Mount Vernon programme behind it. Maritime, cool-summered, and the closest North American analogue to the English West Country — which is why European cider cultivars were planted there rather than east of the Cascades.
New England and New York
The oldest continuous cider ground in the United States, with the University of Vermont and Cornell programmes. New York also holds the USDA national apple collection at Geneva, which is where the largest single-season cider characterisation in this site’s data was measured.
Virginia
The mid-Atlantic, and the region whose historic cider culture was most completely lost. Harrison, the highest-phenolic cultivar in the site’s Virginia dataset, is a rediscovery rather than a survival.
Michigan
A large apple-growing state with a cider industry built on dessert and processing fruit rather than on cider cultivars, which is a materially different starting point from the other four.
Québec
Drawn above the border and in a different fill because it is a separate legal system as well as a separate country. It holds Cidre de glace du Québec, the only protected cider name in North America.
Why they are drawn apart
These are not one region with local variations. They have different climates, different orchard bases, different research institutions and different histories, and a reader who treats "American cider" as one thing will get every one of them wrong.

Climate and land

The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.

The Cascade range divides the region into two climates that could hardly be less alike. West of the mountains the climate is maritime, with mild wet winters, dry summers, cool nights and a long frost-free season — conditions broadly comparable to north-west Europe and capable of ripening European cider cultivars without irrigation. East of the mountains lies a rain-shadow desert with hot, cloudless summers, cold winters, very large diurnal temperature swings and annual rainfall too low for orcharding without irrigation. The eastern side accumulates far more heat and far more sunlight, producing high sugars and intense colour, while the cold nights preserve acid better than a comparably hot but humid eastern climate would. Because irrigation supplies the water, growers there control tree water status directly, which is a degree of precision no rain-fed European region has. Disease pressure is correspondingly low in the dry interior and substantial in the wet west.

Soils

The eastern orchards sit largely on deep windblown loess over basalt, low in organic matter and dependent on irrigation and fertigation, but deep-rooting and free-draining. West of the Cascades the valley floors carry alluvial and glacial-outwash loams with higher rainfall and, in places, drainage problems that make site selection more restrictive.

About Pacific Northwest

The Pacific Northwest is the largest apple-growing region in the United States and now the largest cider-producing one, and neither fact rests on a long tradition. Commercial fruit growing here is a product of twentieth-century irrigation engineering and rail freight, and the cider industry is a product of the last thirty years. What the region has instead of history is fruit in enormous quantity, a technically sophisticated growing sector, and a research base that measures rather than assumes.

The Cascade divide is the single most important thing to understand about the region. The arid east grows the fruit: hot cloudless summers, cold nights, deep loess soils and complete control of water through irrigation, producing high-sugar, well-coloured, low-disease fruit at scale. The maritime west has the cool, damp, long-season conditions in which English and French cider cultivars behave much as they do at home, and it is there that most of the region’s purpose-grown cider fruit is planted. A cider region containing both a desert and a temperate rainforest has options no single-climate region does.

Because the fruit supply is dominated by dessert apples, most cider by volume is made from high-sugar, low-tannin juice, and its structure comes from acid, carbonation and added ingredients rather than from phenolics. That is a legitimate style rather than a failing, but it is a different object from a West Country or Norman cider and the region’s own producers generally say so.

The region has also done something unusual: it has built a formal sensory vocabulary for cider from trained-panel work rather than borrowing one from beer, wine or English tradition. Combined with published juice-composition data for cider cultivars grown under both Cascade climates, this gives the Pacific Northwest a measured basis for description that most cider regions, including the historic European ones, do not have.
