Small, hard and severe — very sharp, markedly astringent, and deeply coloured throughout.
Aroma
No aroma descriptors are recorded for Geneva Crab, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. About Geneva Crab
Geneva Crab was distributed as an ornamental and a pollinator, and it is in commercial orchards across the northeast for those reasons rather than for its fruit. Cider makers noticed it because it does two things almost nothing else in North America does at once: it is deeply pigmented all the way through, and it is genuinely astringent.
It is used in very small proportion — a few percent — where it contributes colour and phenolic grip out of all proportion to the volume. That is the standard way ornamental crabs enter North American cider, and it is a legitimate technique rather than an improvisation: a maker without access to European bittersweets has to find structure somewhere, and the ornamental crabs are the most concentrated source available.

The classification recorded above comes from a research programme applying English thresholds to a purple-leaved ornamental crab, which is further outside the scheme’s intended range than any other record in this file. It is reported because it was assigned, and the limitation is stated rather than hidden.
Names, origin and identity
Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

Named for the station and distributed from it, but the raising is less clearly documented than Redfield’s. The fruit belongs to the purple-leaved ornamental crab group rather than to Malus domestica, and the binomial here reflects that.

A very late Somerset bittersharp with high acid and moderate tannin, cropping heavily in its on years and barely at all in its off ones.
Redfield
A red-fleshed apple released from the New York State station at Geneva in 1938, very high in acid and pigment, now the standard American source of colour in a rosé cider.
