How it is classified
No classification scheme has been recorded for Gravensteiner. That is common outside Europe: the English, French and Spanish systems were each built for their own fruit, and a cultivar grown where none of them applies simply has no class. Intensely aromatic — one of the most strongly perfumed apples in cultivation — with a crisp, juicy flesh and a lively acidity that fades quickly once the fruit is picked.

Maritime, with cool summers and mild wet winters — the closest North American analogue to the English West Country, and the reason the programme planted European cider fruit here rather than east of the Cascades.

Color gold, sharp. Good aroma but cider not complex, sour with a lingering tang, fruit should be fully ripe. Short aftertaste, refreshing character, easy to drink, sweetening would enhance balance.

Very early, and it will not wait. Picked at the right moment it is extraordinary; a fortnight later it is soft, dull and unremarkable.
A few weeks at most. Everything about the cultivar argues for using it immediately.
Triploid: a poor pollinator that needs two compatible diploid partners.
A triploid carries three sets of chromosomes rather than two, and its pollen is effectively sterile. It cannot pollinate another tree and needs two compatible pollinators of its own, which is a real constraint on how an orchard containing it has to be planted.

Made alone and handled carefully it gives a strikingly aromatic, light, low-tannin cider. It has to be made cold and fast and drunk young; there is nothing in it that will improve with keeping.
About Gravensteiner
Gravensteiner is the most aromatic apple most people will ever eat, and its cider inherits that. It is not a cider apple by design — it is a dessert cultivar of the first rank, grown across northern Europe and, for much of the twentieth century, in enormous quantity on the American Pacific coast — but in the Nordic countries, where there is no tradition of purpose-grown cider fruit at all, it is one of the fruits a producer turns to when they want a cider that smells of something.
Its origin is a genuine and instructive dispute. The Danish claim and the German claim both point at the gardens of the castle at Gråsten, which is Gravenstein in German, in a region of Southern Jutland that has been Danish and German at different times; the two national claims may therefore be the same claim wearing different flags. A third account brings the fruit north from Italy. None of these is settled, and CiderHQ records the dispute instead of picking the version that makes the tidiest sentence.
Working with it is a matter of speed. The aroma peaks briefly, the acid falls quickly after picking, the fruit does not store, and the cultivar is triploid and biennial into the bargain. A Nordic producer using Gravensteiner is pressing within days, fermenting cold to keep the volatiles, and bottling something meant to be drunk within the year. That is a legitimate way to make cider and a very different one from the Norman or Asturian model.
Its absence of tannin is worth stating plainly against its reputation. This is a fruit that gives aroma and freshness and nothing structural at all, and a cider made from it alone is light, fragrant and short. In the Nordic countries that is close to the definition of the style; elsewhere it would be a component.
Names, origin and identity
Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

The Danish and German claims both centre on the castle gardens at Gråsten/Gravenstein in a territory that has changed hands more than once; an Italian origin with the fruit brought north has also been argued. - What temperature should cider ferment at — Most cider is fermented cool, commonly between about 12 and 18 °C. Cooler ferments keep more fruit aroma and run slower; above the low twenties the cider tends towards hot, solvent-like higher alcohols.
