Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
The Swiss Plateau is the country’s lowland corridor, running between the Jura and the Alpine front at a few hundred metres above sea level. Its climate is moderately continental: cold winters with frost and some snow, warm summers, and rainfall spread through the year with a summer maximum. The lake basins — Constance, Zurich, Neuchâtel — moderate temperatures locally and reduce frost risk, which is why the orchard concentrations follow them. The season delivers more accumulated heat than Atlantic Europe, so fruit ripens fully and comes in with good sugar, but the varieties grown are culinary and multipurpose types with little tannin. Spring frost in the open plateau is the principal hazard, and hail is a recurrent summer risk. Humidity is moderate, so disease pressure is real but manageable, and fruit generally reaches the press in sound condition.
Soils
Glacial moraine, gravel and loam across the plateau, generally deep and free-draining, with heavier lacustrine soils near the lakes. Fertile enough to support both intensive orchards and productive grass beneath standard trees.
The orchards
How the fruit is actually grown here — tree form, planting, what else the ground is used for, and who owns it.
- Hochstamm standard trees over grazed or mown grassland are the traditional form, scattered across farmland and around villages in the same pattern as German and Austrian meadow orchards.
- Thurgau and the country around Lake Constance carry the densest concentrations, and the canton’s association with fruit is strong enough to have generated a long-standing nickname.
- A federal programme in the middle of the twentieth century subsidised the felling of high-stem trees in order to reduce fruit surpluses and to encourage intensive planting; the standing population fell dramatically as a result.
- Conservation organisations now support the replanting and maintenance of Hochstamm trees explicitly as habitat and landscape, with fruit as a secondary consideration.
- Modern commercial orchards on dwarfing rootstock supply the fresh and juice markets and are a separate system from the surviving standard trees.

History
How cider making here came to take the shape it has.
- Fermented apple and pear juice has been an ordinary rural drink across the Swiss Plateau over a long period, made on farms and drunk through the year.
- A large cooperative juice and cider sector developed in the twentieth century, with unfermented Süssmost becoming a major product in its own right — a distinctively Swiss outcome, since elsewhere the fermented product dominated.
- The mid-century federal felling programme, aimed at reducing surplus and modernising fruit growing, removed a very large number of high-stem trees and permanently altered the plateau landscape.
- Consumption of the fermented drink declined through the same period as beer, wine and soft drinks displaced it.

About Swiss Plateau
Switzerland’s cider country is the Plateau, and its most useful lesson for an outsider is linguistic. Süssmost is unfermented juice; Suure Most is the fermented drink. Both are everyday products sold side by side, and the fact that Switzerland needed two words where its neighbours use one reflects an unusual outcome: the unfermented product became a major commercial category in its own right, which happened almost nowhere else in Europe.
The fermented drink itself is close in kind to Swabian Most and Hessian Apfelwein — dry, sharp, low in tannin, moderate in strength — because it is made from the same sort of fruit. The plateau’s continental season gives more accumulated heat than Atlantic Europe, so the fruit ripens fully and the drink can carry a little more weight, but the absence of tannic cider varieties sets the character.
The most consequential episode in the region’s orchard history is a policy one. In the middle of the twentieth century the Swiss federal authorities subsidised the felling of high-stem trees, in order to cut fruit surpluses and push growers towards intensive orchards. It worked, and the standing population of Hochstamm trees fell steeply. Very few cider landscapes anywhere were reshaped as directly by a single deliberate programme.
What has followed is conservation. Standard-tree orchards on the plateau are now maintained largely as habitat and landscape, supported by organisations set up for that purpose, with the fruit a secondary return.
