An old Bernese cider apple, sharp and unusually astringent for the region, and one of the few Swiss cultivars that a cider maker would recognise as purpose-grown press fruit.

How it is classified
No classification scheme has been recorded for Sauergrauech. That is common outside Europe: the English, French and Spanish systems were each built for their own fruit, and a cultivar grown where none of them applies simply has no class. What the fruit contributes to a blend is described below regardless — the class is a shorthand for that, not a substitute.

Sharply sour with a genuine drying astringency behind it — the combination is close to a bittersharp, and it is rare in the Most countries.

- Apple skin — The dry, faintly waxy and slightly bitter aroma of the fruit’s surface rather than its flesh, carried by cuticular waxes, hexyl esters and skin-concentrated phenolics.

Of the central European cultivars in this file, one of the few carrying both axes and therefore one of the few that could stand alone. Swiss producers reviving traditional cider have used it that way.
About Sauergrauech
Sauergrauech is the exception in central European cider fruit. The German, Austrian and Swiss traditions run on high-acid, tannin-free apples, and the resulting drinks get their interest from acid balance, aroma and freshness rather than from structure. Sauergrauech has both acid and phenolic weight, which puts it closer to an English bittersharp than to anything else in this section of the file.
Its name is a plain description in Swiss German: sour, and greyish-russeted. Russeting is relevant here in a way it usually is not — a thick corky cuticle changes water loss and handling, and the fruit’s phenolic contribution comes substantially from the skin, so a small russeted apple delivers more per litre than a large smooth one.
Swiss Suure Most is the least internationally visible of the major central European cider traditions and one of the more interesting. Switzerland had a very large orchard population in the early twentieth century, lost a great deal of it to a state-sponsored grubbing-up programme and to changing drinking habits, and has seen a modest revival built partly on old cultivars like this one. Where a Swiss producer today is making something with structure, Sauergrauech is likely to be in it.
It carries no classification here because no registered scheme covers Swiss fruit. If one did, this is the cultivar that would sit least comfortably in it, since its combination of acid and tannin is exactly the case the central European schemes never needed to describe.
Names, origin and identity
Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

- How does cider ferment — Yeast consumes the sugar in apple juice and produces roughly equal masses of ethanol and carbon dioxide, along with the esters and higher alcohols that give cider much of its aroma. In a wild ferment several yeast species take turns before *Saccharomyces* finishes the job.

- Should i ferment cider in an oak barrel — A sound, full barrel is a fine maturation vessel; a leaky, half-empty or previously spoiled one is the fastest route to vinegar. Wood cannot be sterilised, so a barrel carries whatever lived in it before.
- What is maceration in cider making — Maceration is letting milled pomace stand before pressing, so that enzymes soften the tissue and phenolics and aroma move from the skins into the juice. It raises both colour and tannin, and raises the risk of oxidation with them.
