Small, hard and sharply acid, with a drying edge that is genuinely unusual in German fruit and is part of why Viez has more grip than Hessian Apfelwein.

Viez made largely from Weinapfel is very dry and very sharp, which is the traditional character of the drink rather than a fault in it.
About Trierer Weinapfel
Viez is the cider of the Moselle and the Saar, made in a region better known for Riesling, and the Trierer Weinapfel is its characteristic fruit. It is small, hard and extremely acid, and — unusually for a German apple — it carries enough phenolic material to give the drink a perceptible dryness on the finish.
That small quantity of tannin matters more than it sounds. German cider’s defining problem is structural emptiness: high acid, no grip, and a finish that stops rather than lingers. The Frankfurt solution was to add Speierling, service-tree fruit, from outside the genus. The Moselle solution was a local apple that happened to have some. Neither region had access to anything resembling a Norman bittersweet.
Part of the phenolic contribution is geometry rather than chemistry. The fruit is small, so a tonne of it carries much more skin than a tonne of large apples, and skin is where most of an apple’s phenolics sit. Small hard cider apples everywhere benefit from the same arithmetic, and it is one reason fruit size appears so often in cultivar descriptions that otherwise say nothing about analysis.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.
