Sweet and almost entirely without sharpness; the juice tastes flat rather than rich because there is nothing to set the sugar against.

No aroma descriptors are recorded for Tolman Sweet, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. A single-varietal Tolman Sweet is the standard cautionary example. With essentially no acid the ferment runs at a high pH, the cider tastes flat, and the risk of lactic and acetic spoilage is materially raised. Acid has to come from somewhere.

About Tolman Sweet

Tolman Sweet is worth a record precisely because it is not good cider fruit. It is a hard, pale, very sweet apple with almost no malic acid, and its historic uses reflect that exactly: boiled into apple butter, where acid would have curdled dairy and cut the sweetness; pressed into sweet cider to be drunk before it fermented; and thrown into the farm blend as a sugar contribution.

Fermented on its own it is a problem. Malic acid is what holds cider juice at a pH where the yeast has the advantage; take it away and lactic bacteria, acetic bacteria and film yeasts all find the vat congenial. A maker who presses an acidless sweet apple and lets it ferment without correction is likely to end up with something soft, flat and eventually vinegary, and that outcome has nothing to do with skill.

The New England farm blends solved this without any theory behind it, by mixing what the orchard held: a sweet apple, a keeper, a sharp culinary. Blending in cider is often described as an aesthetic exercise, and for traditional English bittersweets it largely is. In the North American context it started as a safety measure, and cultivars like this are the reason.
