What is the difference between a rack-and-cloth press and a belt press?

In short

A rack-and-cloth press builds pomace into cloth-wrapped layers separated by racks, then applies pressure to the whole stack. The cloth acts as a filter, so the juice runs relatively clear, and the deep bed gives a long, gentle extraction. Building and stripping the stack is slow, manual work.

A belt press feeds pomace continuously between two porous belts that converge over rollers, squeezing the juice out as the material travels. It runs without stopping, needs little labour, and handles high tonnage.

What each optimises is different. The rack-and-cloth press produces cleaner juice with less suspended solid and treats the pomace gently; the belt press produces far more juice per hour with far less labour, and its juice carries more fines that then have to be settled or clarified.
