What is the difference between cider and beer?
In short
Cider is made by fermenting the juice of apples, which already contains sugar. Beer is made by fermenting cereals, whose starch must first be broken down into sugar by malting and mashing before a yeast can use it.
Everything downstream follows from that. Cider needs an orchard, a mill and a press, and traditionally no boil at all; beer needs a mash tun and a kettle. The acids, tannins and aromas each begins with come from unrelated raw materials, so the finished drinks share little beyond ethanol and carbon dioxide.
They are also separate legal categories almost everywhere, defined and taxed under different rules — which is why a drink can fail to be cider in law without becoming beer.

Fermented apple juice. The sugar is already in the fruit, so the production chain runs orchard, mill, press, ferment.
Beer
Fermented from cereal, usually malted barley, with hops. The sugar has to be manufactured from starch by enzymes during mashing before fermentation can begin.

A misconception worth clearing up
This comparison exists partly because of the claim below, which is repeated often enough that most readers arrive holding it.
Cider is a type of beer, or is made by brewers doing something slightly different.
What is actually the case: The two share only fermentation. Cider has no mash, no boil and no cereal, and in most legal systems is a distinct category with its own definition and duty treatment. Being sold from the same bar is not a technical relationship.
