Is cider more like wine or beer?
In short
Technically, cider sits with wine. Both are made by fermenting juice pressed from fruit, both are seasonal, both take their character largely from cultivar and site, and both use the same vocabulary of racking, lees, malolactic conversion and blending.
The differences are in the fruit. Apple juice carries roughly half the fermentable sugar of ripe grape juice, so cider finishes at a lower strength without intervention. Apple acid is malic where grape acid is largely tartaric, and apple tannin is procyanidin from a different biosynthetic route than grape seed and skin tannin, with a different balance of bitterness to astringency.
The consequence is that a cider maker has less alcohol to work with as a preservative and a structural element, which is why cider technique leans harder on acidity, carbonation and tannin than winemaking does.
