Cider vs mead
What is the difference between cider and mead?
In short
Cider ferments a fruit juice that arrives complete: sugar, acid, tannin, nitrogen and the minerals a yeast needs are all in the apple. Mead ferments honey dissolved in water, and honey supplies sugar and aroma but almost nothing else.
That absence shapes mead-making. Honey must is low in assimilable nitrogen and low in acid, so nutrient addition and acid adjustment are standard rather than corrective, and fermentations are prone to running slow or sticking without them.
Strength differs too: honey must can be set to any gravity the maker chooses, so meads range from cider-strength to fortified-wine strength. A cider is bounded by whatever sugar the harvest produced.
