What temperature should cider be served at, and why does the same cider taste drier when it is cold?
In short
Most cider is served somewhere between about 6 °C and 14 °C, and where in that span depends far more on the style than on the weather: light sparkling ciders are usually taken at the cold end, tannic still ciders and traditional Spanish sidra natural at the warm end.
The same cider genuinely tastes different at different temperatures, and nothing in the bottle has changed. Cold reduces the rate at which aroma compounds leave the surface of the liquid, blunts the perception of sweetness, and does comparatively little to acidity — so a chilled glass reads as drier, sharper and less aromatic than a warm one.
Over-chilling is the more common error. Below about 5 °C most of what distinguishes one cider from another has stopped reaching the nose.
Four things temperature changes at once
Aroma is the first and largest effect. Everything a cider smells of — esters, higher alcohols, the phenolic compounds that read as smoke or leather, the acetaldehyde that reads as bruised apple — reaches the nose only as vapour above the liquid. Volatility falls steeply as temperature falls, so a cold glass simply delivers less of every aroma compound to the receptors. Because most of what people call "flavour" is retronasal aroma rather than taste, this is felt as the whole drink shutting down.
Sweetness is the second. Perceived sweetness declines as temperature falls, and it declines more sharply than perceived acidity does. That asymmetry is why a medium cider at 4 °C can read as dry and a touch hollow, and why the same cider at 11 °C reads as rounded and noticeably sweeter. The residual sugar is identical in both glasses.
Bitterness and astringency are the third, and they move the other way. Tannic ciders taste harder and more drying when cold. The mechanism for astringency is the binding of procyanidins to salivary proteins, and cold both slows that interaction and removes the aromatic complexity that would otherwise sit alongside it, so what remains is the drying sensation without the fruit that usually balances it.
Carbonation is the fourth. Carbon dioxide is more soluble in cold liquid, so a cold sparkling cider holds its gas and releases it in fine, slow bubbles; the same bottle poured warm foams hard, loses gas quickly, and can overflow the glass. This is a practical constraint on serving a sparkling cider warm even where the flavour would benefit.
Why cold reads as drier
The everyday version of this is worth stating plainly, because it explains a great deal of disagreement about particular ciders. Two people can drink the same product, describe it as "medium, quite appley" and "bone dry and rather thin", and both be reporting accurately — if one glass was at cellar temperature and the other had spent three hours in the coldest part of a fridge.
The effect is large enough to be used deliberately. A cider that is fractionally sweeter than intended can be served colder to bring it into balance. A cider that is austere, tannic and closed can be allowed to warm in the glass, which is why a tannic still cider often shows better at the end of a glass than at the beginning.
It also explains a persistent commercial pattern. Mass-market ciders are formulated to be drunk very cold and over ice, and their sweetness levels are set on that assumption. Served at cellar temperature the same product tastes markedly sweeter than its makers intend, because the chill it was designed around has been removed.
Ranges by style
The figures below are working ranges rather than rules, and they assume a domestic setting: a glass poured and drunk over ten or twenty minutes, in a room warmer than the cider, so the drink is rising in temperature throughout. Serving at the bottom of a range therefore usually means finishing near the top of it.
Where a style is traditionally served at a particular temperature in its own region, that convention is given, because it is generally the temperature the cider was made to be tasted at.

How to hit a temperature without a thermometer
A domestic fridge runs at about 3–5 °C, which is colder than almost any cider wants. A bottle taken straight from the fridge and left standing in a room at 20 °C warms at roughly two to three degrees in the first ten minutes and more slowly thereafter, so twenty minutes out of the fridge lands most bottles somewhere in the 8–10 °C band.
A cellar, a garage in winter, or the floor of a north-facing cupboard will often sit close to 10–12 °C without any intervention, which is why traditional still ciders are described as needing no preparation at all. A cider stored at cellar temperature is already at serving temperature.
The glass matters more than people expect. A large glass in a warm hand raises the temperature of a small pour quickly. Pouring less at a time, and refilling, keeps a cider closer to where it started than filling a glass and working through it slowly.

CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.
