Mulled cider and what heat does to it

What does heating do to cider, and does mulling remove the alcohol?

In short

Heating a cider does three things at once: it drives off volatile aroma, including most of what the cider tasted of; it extracts aromatic compounds from whatever spice is in the pan; and it makes acidity and sweetness read differently, because both are perceived differently at high temperature.

It removes some alcohol but not most of it. Ethanol and water form a mixture that boils together rather than separating cleanly, so a cider simmered briefly retains a substantial proportion of its original alcohol — and a hot drink is absorbed faster than a cold one.

The practical consequence is that a good cider is largely wasted in a mulling pan, and a mulled cider should be treated as an alcoholic drink of uncertain strength rather than as a soft one.

What heat removes

Everything a cider smells of is volatile by definition, and volatility rises steeply with temperature. Esters, higher alcohols and the light fruit character of the cider begin leaving the pan as soon as it is warm and are substantially gone by the time it steams. This is not a subtle loss: a cider chosen for its aroma will have lost most of that aroma before it reaches the cup.

What survives heating is what is not volatile: sugar, acid, tannin, and the colour. A mulled cider is therefore a drink dominated by sweetness, sharpness and astringency, with its aromatic content supplied almost entirely by the added spice rather than by the cider.

Tannin behaves awkwardly at temperature. Astringency is generally perceived more strongly in a hot liquid, and a heavily tannic cider that is balanced when cold can taste harsh and drying when hot. This is one reason the traditional mulling ciders are the sweeter, lower-tannin ones rather than the tannic farmhouse styles.

Alcohol: how much actually goes

Ethanol boils at about 78 °C and water at 100 °C, which leads to the widespread belief that heating a drink boils the alcohol off first and leaves the rest. It does not work that way. Ethanol and water form an azeotropic mixture: the vapour above a dilute solution contains both, in a proportion that never reaches pure ethanol, so alcohol leaves gradually alongside water rather than being cleanly stripped out.

How much leaves depends on temperature, time, and how much surface is exposed. A cider warmed to serving temperature and covered loses comparatively little. A cider held at a simmer uncovered for an hour loses a great deal more, and also loses volume, which concentrates what remains. Published figures for alcohol retention in cooking vary widely with method, and no single percentage can honestly be given for "mulled cider" as a category.

The consequence for a reader is straightforward: a mulled cider cannot be assumed to be weak, and its strength cannot be calculated from the label of the bottle that went into it. Because it is served hot and is often sweetened, it is also easy to drink quickly, and a warm drink is absorbed from the stomach faster than a cold one.

What heat adds

Spices contribute their aroma to the liquid by extraction, and the extraction is temperature and time dependent. Whole spices — cinnamon bark, cloves, star anise, allspice, cardamom — give up their aromatic oils slowly and can be held in a warm liquid for a long period without becoming harsh. Ground spices extract very quickly, cloud the drink, and readily overshoot into bitterness.

Citrus peel behaves the same way as spice: the oils in the flesh-free zest extract cleanly, while the white pith carries bitter compounds that come out with prolonged heating. This is why the traditional instruction is to pare the zest thinly.

Added sugar or honey changes the balance rather than merely sweetening. Because heat suppresses the perception of sweetness less than cold does, a mulled cider tastes sweeter than the same mixture would cold, and it is easy to over-sweeten a cold mixture that will later be served hot.

Practical handling

The historical note

Heated, spiced and sweetened drinks are recorded across northern Europe long before reliable refrigeration, and cider appears among them alongside ale and wine. The practice belongs to a period in which spiced hot drinks were a general category rather than a seasonal speciality, and in which the base drink was frequently something that benefited from being disguised.

That last point is worth keeping. A substantial part of the historical case for mulling was that it made an indifferent or deteriorating drink palatable, by supplying aroma from spice and sweetness from sugar or honey. The technique retains that property, which is a reason it is used and a reason it is not applied to good cider.
