Opening a bottle-conditioned cider

How do I open a bottle-conditioned cider without losing half of it?

A bottle-conditioned cider holds carbon dioxide in solution under pressure and a bed of yeast sediment at the bottom, and the two combine badly: the sediment supplies nucleation sites where dissolved gas can rapidly form bubbles, so a disturbed or warm bottle can foam out through the neck as soon as the pressure is released.

The controls are all straightforward. Chill the bottle, let it stand upright for long enough that the sediment settles, open it slowly so that the pressure falls gradually rather than in one step, and pour in a single continuous movement.

If a bottle does start to rise, the effective response is to stop, replace or re-seat the closure if you can, and wait — not to pour faster.

Why it gushes

In a sealed bottle-conditioned cider the carbon dioxide produced by the secondary fermentation is in equilibrium: some is dissolved in the liquid, some is in the headspace, and the pressure of the headspace is what holds the dissolved fraction in solution. Opening the bottle removes the headspace pressure in an instant, and the dissolved gas is immediately supersaturated — it wants to leave, and it will.

Whether it leaves gently or violently depends on how easily bubbles can form. Carbon dioxide does not readily nucleate in clean liquid; it needs a surface. A bed of yeast, fine sediment stirred up through the liquid, or a scratch in the glass all provide millions of such surfaces. A bottle whose sediment is lying undisturbed on the base has comparatively few nucleation sites in the body of the liquid. A bottle that has been carried, laid on its side, or rolled has sediment distributed through the whole volume, and every particle is a place for a bubble to start.

Temperature multiplies the effect. Carbon dioxide is markedly more soluble in cold liquid, so a cold bottle has proportionally more of its gas dissolved and a lower headspace pressure to release; a warm bottle holds less in solution, sits at higher pressure, and releases what it holds more energetically.

A third factor is over-carbonation itself. A bottle that received too much priming sugar, or that refermented in the bottle because residual sugar met surviving yeast, may be at a pressure the style never intended. That is a fault rather than a serving problem, and no technique reliably opens such a bottle tidily.

The sequence

If it starts to rise

The instinctive reaction — pour faster to get ahead of it — makes the problem worse, because the movement agitates the cider and creates more nucleation. The useful reaction is to arrest the process.

Put a thumb or the flat of a crown cap over the neck to restore a little back-pressure, and hold the bottle still and upright. Foam collapses on its own within seconds to a minute once agitation stops. If a bottle is deeply unwilling, standing it in an ice bath for ten minutes and starting again is more effective than any pouring technique.

A bottle that gushes despite being cold and settled is telling you something about its condition rather than about your method. Persistent gushing across a batch usually means over-carbonation, and occasionally means a microbial haze or a ropiness problem that has changed the liquid’s ability to hold foam.

Point the neck away from yourself and from anyone else, keep your face clear of the top of the bottle, and do not open a bottle that is visibly bulging, weeping, or has a cap that has begun to lift on its own.

Sediment: to pour or to leave

Bottle-conditioned cider is expected to carry a deposit. It is not a fault, and it is not dangerous; it is dead and dormant yeast, together with whatever fine solids the cider carried into the bottle.

What it does to the drink is a matter of preference rather than of correctness. Yeast in suspension adds a soft, slightly savoury, bready character and a fuller texture, and it makes the cider hazy. Left behind, the cider is clearer, cleaner and often more sharply defined. A useful practice with a large bottle is to pour the clear cider first, taste it, and then decide whether to add the last cloudy measure.

A perry deposit is often finer and more easily disturbed than a cider deposit, so a bottle-conditioned perry generally wants more standing time before opening than a cider of the same age.
