How do I pour cider without getting the sediment in the glass?

In short

The deposit in a bottle is heavier than the cider around it and will stay where it is if it is not disturbed, so almost the whole job is done before the bottle is opened: stand it upright, leave it alone, and do not tip it back once you have started pouring.

The pour itself should be one continuous movement, with the bottle rotating steadily from upright towards horizontal and never coming back.

Expect to leave cider behind. The last measure in a sedimented bottle belongs to the deposit, and trying to recover it is what puts the deposit in the glass.

Settling

A deposit settles at a rate governed by the size of its particles, the viscosity of the cider and the height of the column above it. Coarse yeast and fruit solids fall quickly and can compact within a few hours; fine haze particles, protein flocs and the very fine lees of a long-aged bottle may take a day or more, and some never fully settle.

A bottle stored on its side has its deposit lying along the length of the bottle rather than in a compact heap at the base. Standing such a bottle upright starts the deposit falling again, and it needs time — often longer than a bottle that has been stored upright — before it will pour cleanly.

Cold speeds settling a little, because cold cider is slightly more viscous but the particles are also less agitated by convection. Its larger benefit is that a chilled bottle is a calmer bottle: there are no thermal currents lifting the deposit while it stands.

The cloudy remainder is not spoiled and is not unsafe; it is cider with yeast and fine solids in it. Some traditions treat it as the best part, some discard it. In Asturias the last of the glass is thrown away as a matter of course, in part for exactly this reason.

A useful practice with a bottle worth attention is to pour the clear cider, taste it, then pour the cloudy remainder into a separate small glass and taste that as well. The difference is often larger than expected: the sedimented portion is fuller, softer and more savoury, and less sharply defined.

For a bottle-conditioned cider from a large bottle, splitting the difference works: pour most of the bottle clear, then swirl the last of it gently and add it back if the fuller texture is wanted. That decision is reversible only in one direction, which is why it is taken last.

When careful pouring will not work

Some deposits do not compact. A pectin haze or a protein haze is suspended rather than settled, and no amount of standing will clear the cider; a microbial haze from a spoilage organism behaves the same way and is a fault rather than a serving problem. In both cases the cider will pour cloudy however carefully it is handled.

A ropy cider — one made viscous by bacterial polysaccharide — pours as a thick, oily stream and will not separate. That is a fault with a named cause, not sediment.

A bottle that has been transported the same day cannot be poured clean, whatever technique is applied. If a bottle with a deposit matters, the only real remedy is time standing upright, and there is no shortcut.
