Sanitation
Also written hygiene, cleaning and sanitising. Each is a name for the same thing, which is why none of them has an entry of its own.
Definition
The routine cleaning and disinfection of everything juice touches. In a cider house it is the single most effective control on spoilage, and it is separated into cleaning, which removes soil, and sanitising, which reduces the organisms left behind.

In more detail
Sugar-bearing residues on cloths, hoses, pumps and tank fittings are where acetic bacteria, film yeasts and Brettanomyces survive between batches. Wooden equipment cannot be sanitised to the same standard as stainless steel, which is a legitimate reason for its character and a legitimate reason for caution.

Milling and pressing
Press cloth
The woven sheet in which a layer of pomace is folded before pressing. Mesh size trades juice clarity against pressing speed, and cleanliness of cloths is a principal control on spoilage organisms in the press house.

Acetification
The oxidation of ethanol to acetic acid by acetic acid bacteria, turning cider progressively into vinegar. It requires oxygen and is the classic fault of a slack, part-empty cask.

Film yeast
Aerobic yeasts, chiefly *Pichia* and *Candida* species, that grow as a dull white or grey film on the surface of cider in a part-empty vessel, metabolising ethanol and acids.

Brettanomyces
A genus of slow-growing yeasts, *Dekkera* in its sexual form, that survive in wood and in finished cider and produce volatile phenols smelling of farmyard, leather, spice and sticking plaster.

Sulphiting
Adding sulphur dioxide, usually as potassium or sodium metabisulphite, to juice or cider to suppress spoilage organisms, inhibit oxidation and enzymatic browning, and give a selected yeast a clear field.
