Bench blending
Also written blending trial, bench trial. Each is a name for the same thing, which is why none of them has an entry of its own.
Definition
Making small measured trial blends of finished batches and tasting them before committing the tanks, so that proportions are chosen on evidence rather than arithmetic alone.

Blend
A cider or perry made by combining juices or finished batches, either by mixing fruit before milling or by assembling separately fermented lots to a target balance.

The relationship between a cider’s sweetness, acidity, tannin, alcohol and carbonation, judged by whether any one of them dominates unintentionally.

A formal sensory method in which a trained panel rates the intensity of each of an agreed set of attributes, producing a quantitative profile that can be analysed statistically.
Chemistry
Titratable acidity
The total concentration of titratable acid in a juice or cider, measured by neutralising a sample with alkali to an end point and expressed as an equivalent of malic acid in grams per litre.
