Free sulphur dioxide

Also written free SO2. Each is a name for the same thing, which is why none of them has an entry of its own.

Definition

The portion of added sulphite still in equilibrium in solution as molecular SO₂, bisulphite and sulphite ions, and therefore still available to protect the cider.

Free SO₂ is what is measured and managed in the cellar, because bound sulphite contributes to the legal total but does nothing useful. It falls over time as it binds and is consumed by oxygen, which is why maturing cider is checked and topped up rather than dosed once.
