How do I crush apples without a powered mill?
In short
At kitchen and garden scale, apples are usually reduced with a hand-cranked toothed roller mill, a grating drum driven by a power drill, or a food processor for very small quantities. All of these work; the difference between them is throughput and effort.
Milling is the step small makers most often try to skip, and it is the step that most reliably ruins the day if skipped. Whole or halved apples will not press: the press squeezes them flat and the juice stays inside intact cells.
A realistic figure to hold in mind is that reducing fruit by hand is roughly as much work as pressing it, and both together make a longer afternoon than most people expect.
The options, and what each costs in effort
Freezing deserves a note because it is genuinely effective and often dismissed. Ice crystals rupture cell walls, so thawed fruit gives up juice readily and can be pressed with much less prior reduction. What it also gives is a long, cold, oxygen-exposed period during thawing, which changes the phenolic and aromatic character, and it needs freezer capacity most people do not have for more than a bucket or two.
The improvised methods — a clean piece of timber used as a pestle in a tub, a mallet on fruit in a strong bag — all work on a few kilograms and all become unbearable above that. They are worth knowing about for a first trial and worth abandoning once the batch size grows.

Where hand milling goes wrong
- Feeding large apples into a mill sized for small ones; quartering first is usually faster than fighting the hopper.
- Milling far ahead of the press, so pomace stands browning in buckets for hours with no intention behind it.
- Using a mill with painted mild-steel parts, galvanised surfaces or unknown alloys in contact with juice — apple juice is acidic enough to attack them, and the result can be a metallic taint or a haze.
- Cleaning the mill at the end of the day rather than as soon as it stops, by which time the pomace has set hard in the teeth.
