Cider revival
Definition
The renewed interest since the late twentieth century in full-juice, regional and traditionally made cider, in Britain, North America and elsewhere, following a long period of consolidation.

The revival has taken different forms in different places: the rediscovery of cultivars and the defence of traditional orchards in Britain; the rebuilding of an orchard base and a stylistic vocabulary in North America; the formalisation of regional traditions under protected designations in France and Spain. What they share is a shift of attention back to fruit.

An unregulated marketing term implying small-scale production, whole-juice fermentation and stylistic intent. It has no agreed threshold in any jurisdiction.

A campaigning definition, established by consumer organisations, for cider made from fresh-pressed juice without pasteurisation, carbonation, concentrate or extensive additions.
Fruit
Heritage variety
An old cultivar surviving outside mainstream commercial propagation, kept going by collections, enthusiasts and old orchards. The term implies age and rarity, not quality.
Perry
Perry pear conservation
The organised work of finding, identifying, propagating and replanting surviving perry pear cultivars, most of which exist as a handful of ageing trees.

Industrialisation
The twentieth-century transformation of cider from a farm product consumed locally into a national branded drink made in large factories from bought-in fruit and concentrate.
