Palate
Definition
In tasting usage, the whole in-mouth impression of a drink, and by extension a taster’s trained sensitivity. Anatomically it is the roof of the mouth, which does little of the tasting.

In more detail
Almost nothing about the tasting sense of this word matches the anatomy. The hard palate is bone covered in mucosa and carries very few taste buds; the soft palate behind it carries some. What a taster means by the palate is the whole in-mouth event — taste on the tongue, touch and temperature through the trigeminal nerve, and aroma reaching the olfactory epithelium retronasally from the back of the mouth.
That last component is the largest and the least intuitive, and there is a good reason to keep it in mind rather than treat the word as loose. Work on cider aroma release has found that the compounds correlating with a perceived attribute in the glass are not the same set as the compounds correlating with it in the mouth, and that a compound sitting well above its published odour threshold in a sample may not be detected at all in the air leaving the mouth after swallowing. What is met on the palate is a different measurement from what is met at the nose.
The second sense — a good palate, meaning a trained taster — is a claim about a person and not about a drink, and CiderHQ uses it only in that explicit sense.

A group of assessors calibrated against reference standards to use an agreed vocabulary consistently, so that their scores measure the drink rather than their preferences.

The single most useful open cider dataset CiderHQ has found. The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones. Read in full on 2026-08-24 and transcribed into `data/trials/wsu-mount-vernon.ts`; four published figures were found to be impossible and are withheld there with their reasons.

Registered for one finding that changes how every descriptor page on this site should be read: the aroma compounds that correlate with a perceived attribute are not the same set when the cider is sniffed as when it is in the mouth. Five commercial ciders, a trained panel and a consumer panel, with the headspace sampled both ways. A compound present above its threshold in the glass was in one case detectable retronasally in only one of the five samples.
