YAN
Also written yeast assimilable nitrogen, assimilable nitrogen. Each is a name for the same thing, which is why none of them has an entry of its own.
Definition
The nitrogen a yeast can actually use — free amino nitrogen plus ammonium — expressed in milligrams of nitrogen per litre. Apple juice is frequently short of it.

In more detail
Apple musts commonly carry YAN well below the level considered adequate for a clean grape fermentation, and perry musts lower still. Deficiency shows as a slow start, a stall in mid-ferment, and hydrogen sulphide, because a nitrogen-starved yeast scavenges sulphur-containing compounds.
Low nitrogen is not simply a defect to be corrected. Keeving depends on it, and a slow, nutrient-limited ferment in a cool cellar is what gives traditional cider much of its character. The decision to feed a ferment is therefore a stylistic one as well as a technical one.

A fermentation that has halted before the sugar is used up and will not restart on its own. It is distinct from a deliberately arrested ferment and from a merely sluggish one.

Hydrogen sulphide
A volatile sulphur compound produced by stressed yeast, smelling of rotten eggs at very low concentrations. In cider it is usually a symptom of nitrogen deficiency during fermentation.

Keeving
A pre-fermentation clarification in which pectin in the juice is gelled into a floating brown cap, taking nutrients and yeast with it, so that the clear juice drawn from beneath ferments slowly and stops with sugar remaining.

Freshly pressed, unfermented pear juice destined for perry. It differs from apple must in its sorbitol content, its citric acid fraction and its lower assimilable nitrogen.
