Why do cider makers blend?

In short

Because the components of a good cider rarely arrive in one fruit. Blending puts acid from one batch against tannin from another, and sugar and body from a third, to produce something balanced from parts that are not.

It is also how a producer manages variability. Seasons differ, vats differ, and a batch that went slightly wrong can be absorbed into a larger volume rather than lost.

And it is how targets are hit. Strength, sweetness, acidity and colour can all be set precisely by blending, which is why every commercial cider sold as a consistent product is blended whether or not it says so.

Blending fruit and blending cider

There are two distinct operations that both get called blending, and they behave differently. Blending fruit or juice means deciding the mix before fermentation — so many tonnes of bittersweet, so many of sharp — and letting one ferment run on the combined juice. Blending cider means fermenting batches separately and combining the finished results.

Blending before fermentation is simpler and is the traditional West Country approach, where a mill takes in whatever the orchard delivers that week. It gives a single homogeneous ferment, which behaves more predictably than several small ones, and it lets a sharp variety supply acid that lowers the pH of the whole vat, which is a genuine microbiological benefit rather than only a flavour one.

Blending after fermentation gives far more control. Each component can be assessed as a finished cider, trials can be run on small volumes, and the final mix can be adjusted to a specification. It is the standard approach where consistency matters, and it is what most producers mean when they describe bench blending.

How a blend is actually assembled

The working method is a bench trial. Small measured volumes of each component are combined in different proportions, tasted blind against each other, and the proportions adjusted. A blender is not aiming at an average; they are looking for a combination that is better than any of its parts, which is not a property that can be calculated from the analyses.

Analysis supports the process rather than replacing it. Titratable acidity, pH, residual sugar and alcohol are measured on each component, and the arithmetic tells the blender what a given proportion will produce for each of those. Tannin, aroma and balance are assessed by tasting because no analysis predicts them adequately.

The result is scaled up and, in careful practice, re-tasted after the blend has settled. Blends change over the first weeks as components interact, and a blend that tastes right in a beaker does not always taste right in a tank a month later.
