What does bottle conditioned mean on a cider?
In short
It means the cider was bottled with fermentable sugar and live yeast still in it, and sealed. The yeast finishes that last small fermentation inside the bottle, and because the gas cannot escape it dissolves into the cider.
The visible consequence is a fine sediment at the bottom of the bottle, which is the spent yeast. It is harmless, and it is the reason a bottle-conditioned cider should be poured carefully or deliberately roused, according to preference.
The less visible consequence is that the cider goes on changing. Live yeast consumes oxygen, protecting against oxidation, and over months the cells break down and add their own flavour, in the same way as in traditionally made sparkling wine.
How the sugar gets there
There are two routes. In the first, the cider is fermented completely dry, then a measured dose of sugar and, usually, fresh yeast is added at bottling. This is priming, and it is the controllable version: the dose determines the pressure, and the arithmetic is well established.
In the second, the cider is bottled before fermentation has finished, so the sugar is what remains of the original juice. This is how cidre bouché and much traditional bottled cider are made, and it is far harder to control, because judging how much sugar is left and how much yeast is still active is a matter of measurement and experience.
Either way the bottle must be strong enough. Carbonation generates real pressure, and a bottle-conditioned cider is normally packaged in a purpose-made pressure bottle with a crown cap or a wired cork rather than in a still-wine bottle.
What it does to the cider
The first effect is carbonation. A bottle-conditioned cider is usually more finely bubbled than a force-carbonated one, and the mousse tends to be softer and to persist longer. Whether this reflects a genuine physical difference in how the gas is held or is largely a difference in the level of carbonation chosen is debated; both explanations are offered in the technical literature.
The second is protection. Live yeast scavenges dissolved oxygen, so a bottle-conditioned cider is unusually well protected against oxidation without needing much sulphite. This is part of why the method persisted in traditions that use little or no sulphur dioxide.
The third is development. After the yeast has finished, the cells begin to autolyse — to break down and release their contents — contributing bready, nutty and savoury characters and some mouthfeel. This happens over months to years and is the reason a bottle-conditioned cider tasted on release and tasted two years later can be markedly different.
Sediment, and what to do about it
The sediment is spent yeast and, in an unfiltered cider, some fine fruit solids. It is not a fault, it is not harmful, and its presence is a direct consequence of the method. A cider that has been bottle-conditioned and then disgorged — the sediment frozen in the neck and expelled, as in traditional-method sparkling wine — will be clear, but disgorging is uncommon in cider outside a few sparkling styles.
Serving practice varies by tradition rather than by rule. English bottle-conditioned cider is usually poured carefully, leaving the last centimetre in the bottle. Some producers of Norman cidre bouché expect the sediment to be left behind too. In parts of the German and Austrian Most tradition and in some farmhouse practice, the sediment is roused into the drink deliberately.
Bottles should be stored upright for a period before opening so the sediment settles to the base rather than clinging to the side. A bottle that has travelled will pour cleaner after a day standing still and chilled.
