Very low acid and very little tannin, giving a soft, unassertive juice that needs a sharp partner to be interesting.

Aroma

No aroma descriptors are recorded for Bartestree Squash, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

  • Proline is an amino acid a wine or cider yeast cannot assimilate without oxygen, so it does not count towards usable nitrogen. In these pear juices it routinely exceeds the whole assimilable amino pool, which is why a perry must can be rich in amino acids and starved of nitrogen at the same time.

The lower Severn and Wye vales: mild, wet, and the only ground in Britain where perry pears have ever been grown at scale. Fruit was collected across three autumns, and the survey reports each collection separately rather than pooling the seasons.

Late October to early November at Hartpury — one of the later-ripening pears in the collection, and later than most of the squash varieties. The National Perry Pear Collection records it ripening in late October or early November at Hartpury, which agrees with the window recorded here.

Pears need a pollinator

Pears are not self-fertile. A variety needs another in blossom at the same time to set fruit, which is why the flowering band matters more in a perry orchard than the harvest window does.

Ripening moves with the site and the season. Where the National Perry Pear Collection’s observation at Hartpury falls in a different band from the window recorded here, both are kept rather than one overwriting the other.

A juice at 2.1 g/L acid fermented alone gives a perry with nothing holding it up, and at pH values typical of such fruit it is also the least microbiologically comfortable option on the list.

About Bartestree Squash

Bartestree Squash is a Herefordshire perry pear named for a village east of Hereford and for the way its flesh behaves under a mill. “Squash” in the Three Counties is not a variety name but a description: a squash pear collapses readily when milled, which makes it easy to press and quick to oxidise, and the word attaches to several unrelated pears including Taynton Squash and Arlingham Squash.

A 2024 analysis put its juice at 2.1 grams per litre of titratable acidity, the lowest of the thirty-eight varieties in that survey, with 360 milligrams per litre of true tannin and a gravity of 1.044. That is a juice with almost nothing in it to push against: no sharpness, very little grip, and not much sugar either. Fermented alone it would give a perry that tastes soft to the point of being shapeless, and the low acid brings a practical problem with it too, because a low-acid juice sits at a pH where the microbiology is less forgiving.

What such a pear is for is volume and gentleness in a blend built around something sharper. That is not a criticism — most perry has always been blended, and a Three Counties orchard planted with a dozen varieties expects several of them to do exactly this job. It also ripens late, into early November, which extends the pressing season past the point where most of the crop is in.

Names, origin and identity

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

Named for the village east of Hereford. “Squash” is a Three Counties word for a pear whose flesh collapses readily under the mill, and it attaches to several unrelated varieties.
