Aroma

No aroma descriptors are recorded for Old Home, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

  • Proline is an amino acid a wine or cider yeast cannot assimilate without oxygen, so it does not count towards usable nitrogen. In these pear juices it routinely exceeds the whole assimilable amino pool, which is why a perry must can be rich in amino acids and starved of nitrogen at the same time.

Compare within a study to see where these figures sat among the other cultivars the same work analysed — which is a more robust statement than the figures themselves, because absolute values move between laboratories and the ordering inside one study mostly survives.

The lower Severn and Wye vales: mild, wet, and the only ground in Britain where perry pears have ever been grown at scale. Fruit was collected across three autumns, and the survey reports each collection separately rather than pooling the seasons.

Pears need a pollinator

Pears are not self-fertile. A variety needs another in blossom at the same time to set fruit, which is why the flowering band matters more in a perry orchard than the harvest window does.

On its own

Not suited to a single-varietal cider

Low in tannin and unremarkable in acid. Nothing about the juice suggests a perry variety, and nothing in its history says it was used as one.

About Old Home

Old Home is not a perry pear. It is an American pear selected in the late nineteenth century for resistance to fire blight, and its lasting importance is genetic: crossed with Farmingdale it produced the OHxF rootstock series, which a large part of the world’s commercial pear industry is grafted onto. Fire blight is the disease that dominates North American orchard thinking, and a pear that resists it is worth propagating whatever its fruit is like.

Its fruit turns out to be unremarkable for perry. A 2022 analysis of juice from a Three Counties tree gave 4.9 grams per litre of acid, 530 milligrams per litre of true tannin and 630 of total phenolics at a gravity of 1.051 — a mild juice with very little grip, which is nearer a dessert pear than a perry pear. That is not a criticism of the variety; it was never selected for juice.
