About Film yeasts

“Film yeast” names a way of living rather than a lineage. The organisms that do it belong to several unrelated genera — Pichia, Candida in the old broad sense, Wickerhamomyces, Debaryomyces, and under some conditions Saccharomyces itself — and what they share is a hydrophobic cell surface that keeps them at the top of the liquid and an oxidative metabolism that puts the oxygen there to use. CiderHQ keeps this record as a grouping because that is how the phenomenon presents in a cellar: a maker lifting the lid on a part-full barrel sees a film, not a species.

The mechanism explains why it is so damaging. A fermenting yeast adds things to a cider; a film yeast subtracts them. It burns ethanol and malic acid for energy, and after a season under a film a cider is lower in alcohol, lower in acid, higher in acetaldehyde and noticeably hollow. Because acidity falls, the cider also becomes microbiologically less well defended than it was.

It is worth distinguishing the fault from the one tradition that cultivates it. In sherry production a flor film is deliberately maintained under controlled conditions and produces a defined style. Nothing equivalent is a recognised part of cider or perry practice, and a film on cider should be read as a signal that a vessel needs topping up and that oxygen is reaching the liquid — which also means that acetic acid bacteria are being given their conditions.
