What causes it
Black tea is oxidised leaf: its character comes from theaflavins and thearubigins formed when catechins polymerise under polyphenol oxidase. Cider arrives at a perceptually similar place by the same chemistry with different substrates — apple procyanidins, built from catechin and epicatechin units, polymerising during maturation and under mild oxidation. The result is a dry, astringent, faintly leafy impression that is more aromatic than plain tannin and drier than plain oxidation. It is characteristic of tannic ciders matured in wood and of perry, where the phenolic profile differs but behaves similarly.

Tannin balancing
Setting the phenolic structure of a blend, which means handling bitterness and astringency separately because they are different perceptions produced by different sizes of the same molecules.

About Black tea

- What are procyanidins in cider — They are the condensed tannins of apples: chains of catechin-type units whose length decides how much of the phenolic load reads as bitterness and how much as astringency. Two ciders with identical total tannin can taste nothing alike.
