What causes it
Where a specific berry cannot honestly be named, red fruit describes the perception produced when medium-chain ethyl esters — ethyl hexanoate and ethyl octanoate — sit over softened, partly polymerised procyanidins. The phenolic component matters: the same esters in a low-tannin cider read as tropical or as pineapple, and it is the presence of tannin structure underneath that shifts the perception towards red fruit. Anthocyanins, present in red-fleshed cultivars and in some skins, contribute colour rather than aroma but reinforce the association.

Ethyl hexanoate
One of the most powerfully aromatic esters in cider, perceptible at a few micrograms per litre, contributing green apple and aniseed to the fruit complex.

A medium-chain ethyl ester contributing ripe pear and a waxy sweetness, and one of the compounds that makes an ester-forward cider feel rounder as well as fruitier.
Procyanidins
The condensed tannins of cider fruit, whose chain length — not their quantity — decides whether the mouth registers bitterness or astringency.
Anthocyanins
The red pigments of apple skin and red-fleshed cultivars, which are colour rather than flavour and which fade quickly in a cider unless the pH is low.

Setting the phenolic structure of a blend, which means handling bitterness and astringency separately because they are different perceptions produced by different sizes of the same molecules.

About Red fruit
Red fruit is a deliberately general descriptor and is the correct choice when the perception is real but the specific fruit is not identifiable. Panels that reach immediately for strawberry or cherry usually cannot agree on which, which is itself evidence that the general term is the accurate one.
It is most reliably met in tannic ciders after a year or more, and its appearance in a young cider is more likely to indicate high ester production than phenolic development.

- Does cider get better with age — Some does. Tannic, dry, bottle-conditioned ciders and ice ciders can gain for several years. Light, fruit-driven and commercially filtered ciders lose their aroma and do not gain anything in exchange.

The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones.
