The strength at which a drink may be described as alcohol-free differs between markets, and in several it is a small positive figure rather than zero. A product described as alcohol-free may therefore contain a trace of ethanol, which matters for anyone avoiding alcohol for medical, religious or recovery reasons.
What makes it this style
- The alcohol is at or below the threshold the relevant market sets for an alcohol-free claim, which is not universally zero.
- The product has generally been fermented and then de-alcoholised, which distinguishes it from apple juice.

About Alcohol-free cider
Removing essentially all of the alcohol from a cider leaves a drink that has to justify itself on entirely different terms. Ethanol was supplying body, sweetness perception, aromatic solvency and preservation; without it, what remains is an acidic, aromatic, fermented liquid with very little weight. Every alcohol-free cider is an answer to the question of what to put in its place, and the usual answers are sugar and carbon dioxide.
The processes are the same as for low-alcohol production, taken further: vacuum distillation, reverse osmosis and spinning-cone separation can all take a cider to a fraction of a per cent. Each strips aroma along with the ethanol, so aroma recovery — capturing the volatile fraction and returning it after de-alcoholisation — is common and is a substantial part of what separates a convincing product from a flat one.
The important thing a reference work can add here is precision about the claim. Alcohol-free is a labelling term whose threshold differs by jurisdiction and which, in several markets, permits a small residual quantity of ethanol rather than none. For most drinkers that is immaterial. For someone avoiding alcohol on medical advice, for religious observance, or in recovery, it is not, and the honest guidance is to read the stated figure rather than the descriptor.
It is also worth distinguishing the category from apple juice, since the two are sometimes conflated. A de-alcoholised cider has been fermented: its sugars have been converted and its aromatic profile is fermentation-derived, dry and yeasty in origin even where sugar has been returned. Apple juice has not. They taste different, and a drinker who wants one and is given the other will notice.

- Whether it was fermented at all. A dealcoholised cider carries fermentation character that a blended juice product does not.
- What the dealcoholisation cost. Vacuum distillation and membrane methods both strip aroma along with the ethanol.
- Sweetness, which is usually raised to compensate for the lost body.
What gets misread
- Assuming alcohol-free means zero. The threshold is set by market and is generally a small non-zero figure.
- Judging it against a cider. It is a different product and the comparison is not the useful one.
Cold, and judged as its own thing rather than against a full-strength cider. With almost no alcohol and very little body, what is left is aroma, acid and carbonation, and warmth exposes the gap where the alcohol was.

Juice blending
Combining juices from different cultivars before fermentation so that the blend ferments as a single batch, as against fermenting separately and blending later.
Back-sweetening
Adding sugar, juice or concentrate to a cider that has fermented dry — a straightforward adjustment that leaves the drink microbiologically unstable until something is done about it.
Forced carbonation
Dissolving carbon dioxide into cider under pressure to a chosen level, giving complete control of the sparkle and none of the flavour a second fermentation would contribute.
Pasteurisation
Heating cider enough to inactivate the organisms that would spoil it, either in the sealed package or in-line before filling, at a measurable cost in fresh aroma.
Labelling
Assembling the declarations a container must legally carry, and confirming that the word cider may lawfully be used at all in the market the product is going to.

Thin body
A cider with no weight or texture in the mouth, most often from over-watered pomace, low-gravity juice or a blend with nothing to give it substance.
Flat and lifeless
A cider with nothing obviously wrong and nothing to say: aroma faded, acidity dulled, finish short — usually the cumulative result of over-processing or slow oxidation.
Cooked character
A stewed-apple, caramel or jam-like character from heat applied to juice or cider, most often through pasteurisation or hot storage.
Microbial haze
Cloudiness caused by a growing population of spoilage organisms, and therefore a symptom of something worse rather than a clarity problem in itself.
