How is traditional West Country cider served from the barrel?

In short

Traditional West Country service is by gravity: the cask sits on a stillage, a tap is driven into its end, and cider runs out under its own weight into a jug or glass.

Nothing is added to push it. As cider leaves, air enters through a vent, which means the cask is in slow contact with oxygen from the moment it is broached and the cider changes across the days it takes to empty.

That progressive change is a defining feature of the tradition rather than a flaw, and it is the main reason the same cider tastes different from cask and from keg.

The arrangement

A cask is placed horizontally on a stillage — a frame or blocks — high enough for a jug to go under the tap, and left to settle so that any suspended solids drop. A tap is driven into the keystone at the end of the cask, and a vent is opened at the top to admit air as liquid leaves. Cider then runs by gravity when the tap is opened.

This is the same method used for cask beer without a beer engine, and the equipment is largely interchangeable. The difference is in what happens next: cask beer is generally expected to be sold within days of broaching, while traditional cider casks in the West Country were routinely drawn from over a much longer period.

In the farm and cider-house context the cask was in a cool back room or cellar and the cider was carried through in jugs and flagons. Direct service from cask to customer at a counter is a later arrangement and is now the form most people encounter, typically at festivals and in the small number of premises that keep cider this way.

What air does to it

Once a cask is vented, oxygen has continuous access to the cider. In the short term this softens and opens the aroma in the same way that decanting affects a still drink. Over a longer period it drives oxidation, and where acetic acid bacteria are present it supports acetification — the conversion of ethanol to acetic acid that turns cider progressively towards vinegar.

A cask therefore has a trajectory. Early in its life it is fresher and often slightly reductive; in the middle it sits where most drinkers place its optimum; late in its life it moves towards oxidative and acetic character. Whether a drinker experiences this as development or as deterioration is partly a matter of taste and partly a matter of how far the trajectory has gone.

Traditional West Country drinkers were entirely used to this and had vocabulary for it. Some accounts describe a preference for cider well down the cask that a modern quality framework would regard as faulty, and it would be dishonest to present the older taste as simply correct or the modern one as simply better informed. What can be said is that the sharp, acetic character often associated with rough farm cider is in large part a dispense and storage effect rather than a fermentation one.

Where the tradition meets a faultAcetification is a defined cider fault with a known mechanism, and a cask that has gone too far has gone too far. Describing traditional gravity dispense accurately means describing both the character it develops and the point at which that character becomes spoilage.

Cask, keg and the argument between them

Keg cider is filtered or at least stabilised, usually carbonated, and dispensed under gas pressure so that no air reaches the liquid. It is consistent from the first pint to the last, keeps for months, and travels. Cask cider is none of those things and is not trying to be.

The consumer campaign that grew up around cask beer in Britain extended to cider, defining a category of unpasteurised, unfiltered, gravity-dispensed or hand-pulled cider and promoting it against the keg product. That campaign is a substantial part of why gravity-dispensed cider still exists in the licensed trade at all, and it is also why the terminology in this area is partisan: the words real and traditional here originate in a campaigning definition rather than in a regulatory one.

The technical trade-off is not in dispute even where the aesthetics are. Gravity dispense gives a cider that changes, is site-specific and cannot be relied upon; pressurised dispense gives one that does not change and can. Which of those a producer wants depends on whether variability is being sold as character or managed as a defect.

Vessels and measures

In the older domestic and cider-house arrangement, cider was drawn into a jug or flagon and taken to the table, from which it was poured into cups, glasses or horn beakers. Sale by the flagon rather than by the measured glass was normal, and it is one of the practices that placed cider outside the ordinary licensed-trade pattern of the measured serve.

Where cask cider is sold today in licensed premises, it is subject to the same measure rules as any other drink and comes in stamped glasses. The jug survives mainly as a takeaway vessel and, at festivals, as a container filled at a counter — an arrangement that preserves the older relationship between a large vessel and a group.
